During our stay at the resort, we had the chance to visit Copa Loca, and it turned out to be one of the highlights of our trip when it came to casual dining. From the moment we walked up, the laid-back tropical atmosphere and open-air design invited us to relax and enjoy ourselves. It’s the kind of place that makes you feel like you’re truly on vacation—with poolside views, palm trees swaying, and the hum of happy guests all around.
We sampled quite a bit off the menu, but two items really stood out: the shrimp bowl and the pizza.
The shrimp bowl was bursting with flavor—tender shrimp cooked just right, nestled over a bed of seasoned rice with fresh veggies, avocado, and a tangy, zesty sauce that tied everything together perfectly. It had a bold, refreshing taste that felt light but satisfying, ideal for a sunny Florida day.
The pizza surprised us with how good it was for a resort bar—it had a crispy, golden crust with just the right amount of chew, a generous helping of gooey mozzarella, and toppings that tasted fresh and well-balanced. It was big enough to share, but so good we nearly polished it off ourselves.
We also enjoyed a few rounds of tropical cocktails—everything from frozen piña coladas to rum punches. The drinks were strong but smooth, well-mixed, and served quickly. They hit the spot after a long day of exploring or lounging by the pool. The staff was upbeat and friendly, happy to make recommendations and ensure everyone was having a good time.
The only thing that fell short—and really the only reason I’m not giving five stars—was the early closing time. For a spot with such great food, drinks, and ambiance, it was disappointing that Copa Loca closes at 9:00 PM. Being inside a resort where guests often get back late from parks, excursions, or other evening activities, we expected it to stay open later, maybe until 10 or 11. By the time we were ready to grab a late-night snack or nightcap, the lights were already out.

I initially was not asked if I would like to order anything until I politely interjected. After I did so, he inquired if I would like something, and I explained that I was there for the trivia and asked for guidance on where to sit. He directed me to the pool chairs, which were situated far from the trivia area.
During our interaction, a family of five sat at the table next to me. The server approached them differently, asking if they needed anything, and when they requested water, he did not inform them that they were not permitted to sit there. As a guest considering a vacation rental at this resort, I am quite disappointed and offended by this experience, which has negatively impacted my perception of the resort.
