Abelardo's Mexican Fresh Emporia — Restaurant in Emporia

I want to assume that maybe it’s a different version of Mexican food considering it’s in the Midwest. I had the Machaca which is dried beef with egg and normally just has tomato, onions and chile but their version had bell peppers and cheese. The flavor was not quite what I wanted. That plate comes with rice and beans topped with more cheese. I went for breakfast and I’m not used to rice for breakfast, Mexican plates usually come with cubes potatoes and beans but I understand if they are trying to give it their twist. I wasn’t to satisfied with the taste but still decided to give them a second chance and ordered menudo which is custom to have hominy which mine had none just a whole lot of chili flavor and tripe and maybe a bit of oregano. Portions were large, but really didn't care for the food. The queso is probably the worst I've ever had at any restaurant. It's the consistency of water with a little bit of spice and tastes a bit like vinegar. I honestly would not have guessed it queso if I'd been blindfolded and hadnt seen it. I would have guessed a bad soup? Beef taco was boring, but fine - threw the rest away and ate something at home. I'd rather enjoy the calories I'm consuming. Tried this today for the first time, I thought the food was terrible. I had taco/ enchilada combo which comes with beans and rice. The sauce ran out all in the bag. I tasted each thing but it was all bad. My garbage disposal got a work out. I loath Taco Bell but it beats this place. Taco Tico is way better. we have great Mexican restaurants in our town ran by local families. The only thing fresh about this place was whatever the green sprigs were all over the top.
