How to turn good meat into poor BBQ

I was a certified BBQ judge for over 20 years in fl. I never try to judge restaurant BBQ as I would competition BBQ.

The simplest thing to begin with is look at the picture of the brisket. In all my BBQ meals all over as well as contests Ive never seen brisket served sliced this thin. This isnt a deli serving a brisket sandwich. This never should have been placed on a plate to be served. Did we tell them and ask them to replace it. No why would we this is what they served as acceptable BBQ. Dry, machine sliced, can you see a smoke ring. .Me neither... Shameful BBQ brisket.

The corn nuggets are fine. Straight out the a bag as the sweet potatoe fries weren't crispy

The ribs have the same lackadaisical touch of smoke I'll give them the benefit of the doubt that the smoke ring wasn't caused by chemicals but actually smoking the ribs in a smoker but if you're looking for any smoke flavor look again.

They were also overcooked they required no pull to get them off the bone. I would never expect them to be made cooked order that would be silly but at least coming to the table warm would be nice.

The beans were good they did have some meat in them ill give them credit for that.. I don't know if the slaw is made in house but it was good also.

The Brunswick stew I've had in Brunswick Georgia typically is a little redder and thicker. But it was ok

The garlic toast... Why can't you cook both sides?

As other reviews have mentioned the seating capacity is limited so just be aware.

The pic of the brisket in separate box is 20 hours later from my favourite BBQ place in port at Lucie. The difference between crap from last night and what real BBQ should look...

We come here every now and then and always enjoy their brisket. It's so good. Always great food - desserts look delicious but we are always too full. The place can still use a makeover inside! Previously, went there in Oct 2020. You order at the counter, wait or sit & they'll bring you your food. The staff seemed nice. They were not wearing masks. Both hubby & I ordered the brisket platter with 2 sides & 2 pieces of garlic toast and he got a soda, a bit surprised that it was almost $33 for just lunch but we did order 2 platters. Next time, I'll go for the sandwich because I had felt very full when done. The brisket was sliced very thin and was tender, tasty, flavorful & came with 2 BBQ sauces. My sides were fried okra & sweet potato fries and hubby had baked beans (which had meat in it) & regular krinkle cut fries. The food was very good, I'd go back for that. It is served in Styrofoam containers and we only got a fork, no knife. There were some mouth watering desserts on the board. I was considering getting a slice of pie to go, but didn't want to walk back to the cashier since there were people standing around waiting. The place could use some sprucing up. The roof by the front seating area looks like it has been leaking for a while. Yuck. The food gets at least 4 stars, the place gets about 2. It's a small place, and got crowded after we arrived. Not enough room to social distance. Would probably get it to...

Went there a year ago. The food was amazing and the lady behind the counter was very nice however the owner's son was rude and ignored me Even after giving him a compliment about how good the barbecue He would not acknowledge me. I remember him having a conversation with someone Prior to me trying to start one with him regarding working out and going to the gym. Tried to start another conversation with him thinking he didn't hear me the 1st tim and and again Shut down with no luck. Not even a look at my direction but he was nice enough to talk to other Customers eating. Took it as some sort of racism Definitely gives you an odd feeling of unfriendliness However the woman behind the counter was very nice and polite Said something about father was in a hospital liver problems or something. Still don't understand what they had to do with me and why he was friendly to everybody else. but that experience is not something you want to go through. Nevertheless the food was good this is just my experience it made me feel pretty Uncomfortable. Probably don't like out of towner's Even though I was born in Florida. Who knows what that young mans problem was But being a business owner myself I would never let one of my employees nevertheless my own family's treat Customer that way without...

I stopped here on my way home from Cross City to Tampa. I arrived on a Monday morning just as they were opening at 11am. The service staff were extremely helpful, friendly and polite. I had the Lunch Special with a couple extra sides: A regular size Pulled Pork Sandwich, Cole Slaw, Fried Okra, Corn Nuggets and Sweet Tea. The portions were generous. This was some of the best BBQ I've had. The meat was tender, juicy, delicious and there was plenty of it! Three choices of BBQ sauce: sweet, mild and hot. The sandwich bun was soft and fresh. I got a pint of Brunswick Stew to go and ate it that night for dinner. It was delicious as well. The place lived up to it's name: BBQ "shack", but it was clean and comfortable. The restroom was clean as well. I highly recommend the BBQ Shack next time you're in the Fanning Springs area and craving barbecue.
