Ive never left a review before but definitely needed to this time. (Also forgive the Pho picture, it was so good I ate basically all of it before even thinking about leaving a review) The reopened "Coal Mine Dragon" (now the Pho Toi) is hands down the best asian food place in Colorado Springs. BEFORE the reopening of the Coal Mine Dragon to the Pho menu, I decided to not eat there ever again. I'm so glad I went back after the new management took over. I had the fried rice, which was some of the best I've had, and the Pho Bo Vien(the Pho with meatballs) and it was all amazing. The to-go containers for the Pho are partitioned out between the hots/colds/and soup, it's all(including the fried chicken) made on site and so good. The service was amazing, the man behind the counter was super understanding about me wandering the restaurant with my two month old when he was getting restless. He even swapped stories with me as I was rocking my little one. The wait time was basically nothing compared to how it used to be, the food is so much better, the menu is all new but if you want the old menu they do have a legacy menu. If you ate at CMD before and didn't like it, go there now, it's my new favorite spot in all of colorado springs.

Update 03-29-2025 MY ORIGINAL REVIEW WAS 5 STARS FOR COALMINE DRAGON, SINCE MY LAST REVIEW THE RESTAURANT WAS PURCHASED AND IT'S NOW A VIETNAMESE RESTAURANT SO I CHANGED MY RATING TO 1 STAR AFTER GOING TO ANOTHER COALMINE DRAGON ON 8TH STREET AND THE QUALITY OF FOOD IS TOTALLY LOWER THAN THIS ONE. *The Restaurant has a New Staff and possibly new management, the staff is very respectful and the food has improved so much that it's worth updating my review. I watched the new employees constantly cleaning and when people departed they immediately went to clean the table and the carpeting. Great improvement overall and I highly recommend this place " In comparison to restaurants in the area, you can still get a good lunch meal for under $15 dollars. (Dinner meal is more expensive than lunch, for affordability lunch is preferable) This restaurant is excellent and I highly recommend it.

In fact it's only one of two places that I would consider a good pescatarian pho. The broth was vegetable broth instead of beef broth that a lot of places use for their seafood pho. The food server was really friendly and knowledgeable. The restrooms were newly renovated. The male restroom had some tools in it as it was at the end of the renovation, but overall very very good-looking and clean. Excellent atmosphere. The food is a hair more expensive than the last menu, but it's understandable for this type of food made in house ( a lot of people don't understand in the restaurant business, restaurants actually buy their food frozen from somewhere). I just recently began going here, even though I have lived in the area for years. I had heard that they had the best egg drop soup, and I ended up trying CMD right around the time that I was craving (VERY VERY MUCH,) HIGH QUALITY egg drop soup. My go to Chinese restaurant is all the way across town. So, I decided to give them a "try." Due to many, many, not so wonderful reviews, I was hesitant, but, decided to go anyway, and I am SO glad I did! To be perfectly honest, the many times I have gone, At first, I simply purchased large egg drop soup: THE ABSOLUTE BEST IN TOWN, They have the most, and largest egg "ribbons," of any other place I have tried. And, to be clear: there is NOTHING else in the soup: I have had it with: corn, tofu, carrots and Peas, etc. And, I thought that was going to bother me, but the broth the huge amounts of delicate flavored egg ribbons, were so great, I thought: If I feel like I WANT those add-ins, I can always add them MYSELF!!! That's how great the soup is!!! So, I began ordering the apps I love: like crab cheese wonton, egg rolls, fried dumplings, and all were delicious, cooked properly (not greasy, sweetened, or anything else.) So, after the apps were all delicious, I decided to order a great dish, that for some reason so many Chinese Restaurants have difficulty with: Combination Fried Rice. I asked before purchasing, (and am SO glad I did,) what they included in their combo fried rice, and it only has 1-2 veggies, and I grew up eating combo f. rice very young, so, I have ALWAYS had it with a good amount of veggies. When discussing this, the lady was very pite, answered my questions, NO ONE THERE AT ANY TIME WAS RUDE to me - despite all of the negative reviews. So, they also seem to be the only Chinese Restaurant that offers duck sauce, and I 💯 LOVE duck sauce, and they are SUPER nice about.giving me extra packets, I even tell them, if they need to I can pay them for some.... So: back to the fried rice: When she and I were talking about it, she asked me what vegetables that I wanted: I told her that the fried rice I had everywhere had the following veggies: water chestnuts, bamboo shoots, baby corn, mushrooms, snow Pea Pods, Broccoli, onions, and cabbage. I told her that they could use whatever they had (in this list,) and honestly wasn't expecting much - again, after reading all of the negative reviews, but, the reviews are WRONG. The combo fried rice, was some of the best, delicious, and VERY healthy. Everything was extremely fresh, not greasy AT ALL, and it was probably the best combo fried rice I have had at all of the Asian Restaurants I have eaten at in the Springs area, in the 26 years I have ordered it. So, to sum up: DO NOT BELIEVE the negative reviews. DEFINITELY order and draw your own conclusions, and you just may be pleasantly surprised. By the way: the ONLY negative I thought of, especially after getting the check that day, I feel that they are a bit pricey...especially with the fried rice customization! Still eating here weekly for the last five years and love love love it! Everything is also perfect for us. Love the staff too! Amazing food! Everything is outstanding. Excellent, friendly staff. Great service. Food quality is always the best! Our favorite place to eat. We eat here at least once a week.

Update 2/2025: since I'm assuming new ownership the service has went severely downhill. The only waitress is extremely rude. As a customer that has been coming here weekly for years the change is shocking. No more kind smiles and hellos. You get rude looks and drinks being tossed on the table. We loved the food so much we just sort of dealt with the horrible waitress until one day a few months back we went in she was the only one in the place. After ordering the same items that we have ordered time and time again (and yes I understand that prices have risen) what normally cost 40ish dollars this time cost 70$. Yep 70$ for 2 entree's, water for drinks and 2 small soups. I thought there has to be a mistake so I walked up to the lady and asked her if she had charged us for the rice I had asked for and changed my mind. She yelled at me that she didn't charge me for that and then very rudely proceeded to yell out every item on the receipt in front of other customers that were waiting for their to go orders. Needless to say we have never been back. So now to see that they are changing to a Vietnamese restaurant isn't shocking but it is sad. The new owners of Coal Mine Dragon ran it into the ground with rude employees and costs that were all over the place.
