The option of Indian food in Conifer is long overdue, and I look forward to trying all of the menu items over time.
My son and I were seated immediately on opening day. The interior is somewhat similar to the layout from the previous restaurant, although I am uncertain if that will change.
The staff were very friendly and subtly enthusiastic about the opening while getting into the flow of handling customers of their new venture. I am glad to see that the staff serving their first customers after a large amount of effort to get to opening day.
The chicken Momo was an excellent choice of appetizer as the dipping sauce was spectacular! My son said that this may be his go-to item as he loved it, and I agree.
The garlic Naan bread was a great change from standard Naan. This Naan was thicker and softer than Naan at other restaurants, I preferred it prepared this way.
The Chicken Vindaloo had a slightly stronger level of spice than I expected at level 3 of 5, but I am glad I started at the medium level so I would not be overwhelmed. The chicken was cooked well, but not overdone, and served within the sauce. I look forward to trying the Tandoori and Tikka Masala. I was curious about the lamb option and will try it on my next visit.
There is a large table for parties of 12 or so, I didn't count, at the right side of the dining area. I am uncertain if there will be an option for a buffet, as I greatly enjoy buffet layouts for trying different items.

Read moreThis restaurant just opened a few months ago in Conifer, Colorado. We have visited four times, one being with an out-of-town guest. We always order mango lassis which are great with spicy foods, and they have a cheese naan we really like.
On our first visit (not long after they first opened) I had their saag dish with paneer and though it was excellent in most respects it seemed like it was (or the paneer was) slightly blander than I am used to. I did request a mild (#1) spiciness so that may have been a factor.
Having said that, my wife and/or I have tried the baingan bharta, tikka masala with paneer, and chicken tikka (with the spinach and potatoes) over these four visits. We have gotten either the mildest spicy or the #2 spicy. My wife likes spicy (hot) food up to a point. I prefer mild. Their #1 (mild) is always fine, but depending on your tolerance for spicy hot foods my wife finds that #2 is quite spicy even for her. Except for that first experience the dishes were all very flavorful. One thing I especially like about the chicken tikka is the chicken breast chunks are separate so you can dip them, cut them how you like, etc.
We've had their gulab jamun (dumplings in syrup) and kheer (rice pudding) for dessert and while we like both, I think we generally like the Kheer a little more.

My partner and I have tried several Indian restaurants "down the hill" and we have a favorite over by Arapahoe/I-25, but this is now competing with that top position, and right in our own neighborhood in Conifer is such a wonderful thing, no more driving 45+ minutes to get high quality Indian food! Have eaten here twice now, one takeout and one dining in, both times were excellent. Butter Chicken and Paneer Tikka Masala are what we order, along with garlic naan (we love the fluffiness of the naan here!). Also tried the Chili Chicken appetizer, which was pretty good, and the Chai with Milk, the Mango Lassi, as well as the Gulab Jamun dessert which was served warm and extremely tasty! In the future we'll probably order 2 servings of Gulab Jamun since we both wanted more of that :D
