Rice Thai Bistro — Restaurant in Frederick

This restaurant blew my mind. We recently moved to Frederick from the Germantown/Gaithersburg area and finding a nice Thai restaurant was one of our first priorities. After trying a few, we landed on Rice Thai Bistro which quickly became not only our favorite Thai in Frederick but one of our favorite in the region. The cooking is creative and well executed. Their best dishes have a way of balancing sweet, savory, and spicy in a way that I have not found anywhere else outside of thoughtful home cooking. We have been here a few times and everything has been excellent, but in particular the grilled duck fried rice with lychee and the pineapple fried rice with ketchup are phenomenal. I would never have thought to add ketchup to pineapple fried rice, but now that I've had it, it feels incomplete without it. The fried rice itself is delightful - soft, buttery, and slightly crispy. We also love the potstickers, cooked perfectly, soft in the center and crispy along the edges - these came free as a promotion, and we will now be ordering them every time. I do recommend going easy with the spice level - 1/5 or 2/5 is plenty. There is so much flavor in these dishes, and too much Thai spice may prevent you from enjoying it. The man who runs the restaurant is kind and sweet and will offer recommendations if you are not sure what to order. My only wish would be for them to expand their hours a bit - maybe close at 9 instead of 8 or stay open on Saturdays? We more often decide to order food on the nights when we work late, and with most restaurants open until 9 or 10, we end up wanting to order from this restaurant when they have just closed. EDIT, in response to owners reply. Thank you for explaining to me that a dish I have ordered at least 100 times from probably more then a dozen different restaurants over the past 20 years has always been made incorrectly! Every other restaurant in the area gives you an option to chose spice level upon ordering, yours is the first one IN 20 YEARS OF ORDERING THIS DISH that has not had the option. Let me clarify, your version of Pad Thai is the WORST I have ever tasted. Not only was it bland, it completely lacked flavor. Plus it was DRY. I have ordered from you 3 times. It's worse each time! Next time you might take some time to concider WHAT a customer is saying and WHY instead of jumping on and replying in less then an hour, AT MIDNIGHT to tell me I don't know what I'm eating.END EDIT Pad Thai has no spice at all, and not much flavor. There was very little egg, barely any peanuts or really anything other then noodles and could use more sauce. Curry puffs are ok but you only get 2. Every other Thai place gives you 3 for the same price (there are a lot of Thai places in Frederick, including one across the parking lot from this one....

Exquisitely savory tasty authentic Thai food. Moderately priced for quality and yummy tasty Thai food with good size portion. I cannot believe the pricing for the lunch combos. I didn’t know what to expect, perhaps smaller portion. Oh boy, I was wrong. I got the ka pow pork lunch combo which came with a sunny side up egg, som tum Thai (papaya salad), & sweet sticky rice pumpkin custard for only $13. With the inflation going right now, this is an unbeatable deal and most important of all, everything in this combo was amazingly fresh and delicious! I got other dishes too Egg Noodles with Red BBQ Pork, Nam Tok (Grilled) Pork Salad, Grilled Beef Salad, Hoi Tod, and Duck Noodle Soup. They also gave out Valentines special strawberry coconut jello desserts. Again everything was so delicious and satisfying.
