Excellent experience right away! I hope this place can keep up the momentum, because the wood-fired pizza is great and the customer service is top-notch. Herb & Fire has a modern, trendy vibe to it - the organization of the restaurant is reminiscent of made-to-order fast food places like Qdoba, Chipolte, and Subway. You can order a pre-made signature pizza or build your own as you flow down a line of super good and super fresh-looking ingredients. At the end of the line, you pay and can get a drink (lemonade, Coke, beer, and wine are all options) while they throw your pie into the fire where you can watch it cook. If there is one thing I don't like about this model it's that at the end of the line things get a bit jumbled - you're waiting for your pizza, wondering around, or sitting at a table waiting for your name to be called.
I am really impressed with this place. It's super clean, but I also visited the day after the grand opening so it hasn't had much time to get busy. I don't like that the chairs are all high-top stools with no back, but it's obvious that the "front" entrance is really the secondary entrance and you're meant to go sit outside on the patio overlooking the nice pretty water feature on the corner of Ivanrest & 44th.
Customer service was top-notch. as we were waiting for our take-out pizzas, the baker? fire guy? dude firing the pizzas looked at us and said it's going to be a couple more minutes because the first one got a little too black so they had completely re-made a new pie for us and already were firing it - without even asking! My first experience with having it delivered was atrocious - and not the fault of the delivery driver.
I have dietary restrictions and have to eat GF and DF. This is one of the few places that can accommodate that with vegan cheese.
I ordered the uccello and cheesy bread - both with the gluten free and vegan cheese options. The cheese bread was so burned that we couldn't chew it. You could snap it and it was loud. I took two slices that I pried off of the cheese bread and stacked the whole thing on those two pieces and they never bent. It was entirely inedible. I don't know what it takes to do this, but the almost non-existent vegan cheese was somehow so dried out that it cracked and fell off if you touched it.
The pizza, itself, was better but also disappointing. The sauce went almost up to the edges, as you would expect. The toppings went within an inch and a half of the edge - not quite how I would like it, but acceptable. The vegan cheese, that was bad. It was a solid 2.5-3" from the crust of the pizza. These aren't big pizzas! It was ridiculous.
There's quite an up charge for gluten free crust and another upcharge for dairy free cheese. I don't mind paying extra for food that is safe for me to eat. However, I expect it to be edible.

I love the large variety of ingredients and the special attention paid to the details of creating those ingredients (for example, not only things like fresh mushrooms, but they also offer a mushroom sauteed in garlic to add even more flavor). Staff have been friendly and have done a good job getting the pizzas wood fired to perfection. My first couple trips cost next to nothing thanks to the Uccellos rewards and their offer of a free pizza after your first visit. Create your own pizza with unlimited toppings that include a plethora of meats, cheeses, veggies, and sauces. Pizzas are large enough for 2 meals, half now, half the next day for lunch or to share, but why would you want to do that when you can customize your own pie 1,000's of different ways!
