This was an absolutely phenomenal experience and a much needed addition to Hamilton which is sorely lacking restaurants with great food and drink. I only found out this place opened and Hamilton Tap and Grill closed last week and I took one look at the menu and knew I needed to come try it out. I came in and sat down at the bar which is quite elegant. The bottles are all lit up so they are easily visible, there is a ton of room, and it was all visually appealing. Tyler quickly came over, got me situated with menus and water, and told me to let him know if I had any questions. I put him to the test right away and asked him to tell me a little bit about this place and what his favorites were since I had never been there before. He happily obliged and listed out some of his favorites while at the same time telling me about Raza’s vision of an elevated dining experience right here in Hamilton. I was impressed and I settled on the squash salad and the steak tartare for my two courses to begin. I also let Tyler talk me into a tequila espresso martini which was pretty good! Definitely needs to be shaken a bit more, you wanna a really thick head on an espresso martini, but it wasn’t too sweet which is a common issue in many espresso martinis and I was definitely satisfied. The squash salad came out within 2 minutes which has to be a record for someone receiving their first course, and it was quite good! The presentation was beautiful and the flavors worked wonderfully together! My only critique is that the squash was slightly under-seasoned to my liking but it was a lovely first course. Around the time I finished my first course, Madison the other bartender on duty that evening, came over and introduced herself. She asked me if I enjoyed my drink and if I was looking for something else. I told her I was looking for a glass of wine to pair with my steak tartare. I saw they had two Italian reds on the menu by the glass, I love Italian reds, and asked if I could take a taste of both. Madison eagerly accepted my proposition and ran over to grab me a taste of both which was very kind and hospitable of her to do! The Belnero they have by glass is what I settled on, it was very dry and nuanced and I knew it would pair perfectly with a fatty steak tartare dish that included bone marrow. I received the bone marrow dish and I could not help but remark at how amazing the presentation was. It was a generous portion as well and the flavors just melted together in my mouth. The chips had either lemon or lime zest on them which was a phenomenal touch, the steak tartare was dressed in a delicious sauce, and the bone marrow was so flavorful! My only critique is that half of the bone marrow was super hot and melted in your mouth while the other half was lukewarm and was not quite as tasty as the other half. Still a superb dish and I highly recommend it to anyone who doesn’t mind raw cow! I had to get dessert because I was so impressed with everything else and Tyler convinced me to get the whipped chocolate cake and I paired that with one of their dessert cocktails, I believe it was called the “French connection”. The dessert was fabulous, the entire dish was chilled which was surprising and the cake itself had a texture unlike anything I’d ever had before. It was slightly off putting my first bite but there was so much flavor that I put that aside and really bought into the dish. The hazelnuts were a wonderful touch and again it was not too sweet which I loved! The French connection is a riff on the godfather I believe, and it was pretty good! Amaretto and cognac work well together and I asked for the addition of a lemon twist which was just the icing on top! It was much fruitier and less peaty than its godfather counterpart and I would definitely recommend people getting it with the lemon twist as it adds a bright lemon note to the entire experience. First, the host lady (black short hair) was not very nice when I asked her if the regular menu was also available besides the Valentine’s special menu and she answered my question by she walked away and her answer was not friendly at all. As a courtesy, they don’t offer you bread to the table. Come on, even the cheapest restaurant in Hamilton, offers chips and salsa to the table! I ordered the steak, I emphasized that I wanted it to be well done, when I got it, it was not well done. I asked them to get it cooked more, and I waited for it. I got it back, and this time when I cut it in the middle; there was still blood and it was pink. I asked my server to please take it back and cook it properly as I desired. I had to wait one more time. For all the waiting time, the least I would have expected is to be offered a certain discount, extra dessert or a little something. When I have had similar experiences in other restaurants, they give you something to apologize for the wait time. For dessert, I got what the server recommended, it was “okay” strawberries sabayon which was supposed to be a creamy texture, but it was melting and the taste was a little bit sour. For the owners of this place, customers service is a TOP priority, offering something for the waiting time, is how you show your customers that you care.
