When you think that you've tried everything and you find out about this traditional dish gandinga.... Don't be fooled by the name or what's in it. sure its a whole bunch of leftover pieces either from a chicken or a pig but..... this stew is just amazingly delicious 😋... at this point I would say that I am a regular. The Pork was cold and not Crispy. El lechon estaba frio y el cuerito no estaba tostado. La carne del lechon sosa sin sal. The pork meat was without enough salt. I order Ribs and most of then are bones without meat. And the pernil was a lot of lard and bones. They should serve enough clean meat without to much lard and bones and the meat Hot and Crispy the cuerito that was no tostado with that clear brown color. I know if they do that the pork are going to weight less. But was Great Service and good food!...

Plenty of other Puerto Rican joints serve pernil which is delicious, but why not go for the whole pig?? You could a range of textures with the lechon, from white meat to dark meat and the crunchiest most perfect skin. House made garlic and hot sauce are a must!
