We chose Central due to the close proximity to the airport and reviews. Lots of available parking. We went at lunch time, and there were several in line ahead of us, but the line moved quickly. Everyone was courteous and helpful. The portions are generous- definitely could share a plate and add an extra side if you must. The prices were a little more than you’d expect for lunch, but the portions were worth it. We had the brisket and pulled pork, mac n cheese, baked beans, yams, and green beans. All the food was served hot. The brisket was dry, aside from the couple fatty pieces that found their way onto my sandwich. The pulled pork was mediocre, at best. Mac n cheese tasted like it was from a box but with extra cheese added. The yams were tasty and sweet. I love green beans- these were ok and likely from a can. The banana pudding did look great, but due to food allergies, I was unable to try it. Overall, the decor and atmosphere felt like a Cracker Barrel (which I love)- an old, familiar, not-too-stuffy, come-as-you-are welcoming feel. The patrons were either heading to the airport or were working nearby construction. Overall, if you’re hungry and want a large portion and aren’t necessarily looking for out-of-this-world food but prefer fast and friendly service, this is a great option. But, if you want the hidden gem that has melt-in-your-mouth tasty barbecue, this place isn’t that. I have been blessed to be able to try different barbecues. In just about every state in the union.
Central Texas barbecue, in my opinion has the best ribs.
I never once even considered putting barbecue sauce on these ribs as that would have ruined the flavor. And that says a lot.
I would think by BBQ Contest rules that their ribs would stand up to any other ribs out there. They even have that little tiny tug that all the judges rave about on these barbecue contest shows.
Way more than that the meat is perfectly moist and perfectly tender and well you just have to get over to central Texas barbecue to see what I'm talking about.
I had their brisket and it was OK. Scale of 1 to 10 I would give it a 7 1/2, and that might be subjective on my part because I like mine with a little bit more fat on the brisket.
If you like really lean brisket this is your place. Because it was very lean very tender very flavorful and so I'm not complaining I'm just saying that it's different from what I like.
I have their collard greens and they were very good. They had little morsels of chicken in there and that was very tasty.
