Kolaches are not merely a breakfast item. They are a Czech-born Houston staple, held sacred by true Texans. I thought my extensive hours of hands-on Shipley's "research" deemed me a kolache expert... until I stepped into the Kolache Shoppe.
If you think kolaches are just dazed and confused hotdogs, then think again. The Kolache Shoppe has mastered their yeast dough - risen three times to create a delicately soft melt-in-your-mouth treat. They've teamed up with some great local players to create impeccable fillings and toppings for their unique kolaches. Goat's milk from Blue Heron to make the cajeta. Slow-smoked prime brisket from Grateful Bread. Lemons from Just Pure Flavors to make a tart, creamy lemon custard. Boudin brought in from Hebert's Specialty meats, just four minutes down the road. They've done more successful collaborations than Lil Wayne.
Of the savory, my favorites are... The Kiolbassa Sausage and Cheese... because if you don't love a sausage and cheese kolache, then you're not from Houston. If you like spice, go for the Sausage, Jalapeno & Cheese kolache. The Ham and Swiss Cheese... stuffed with chopped ham and oozing with swiss. Another mastered classic. The Boudin Kolache... The boudin from Hebert's is great on its own; encase it in pillowy soft dough, and you'll never pick up those ol' Saltine crackers again.
And no meal is complete without dessert... not even breakfast. Bourbon Cajeta... ah, yet another way to take your liquor in the morning. No, but seriously, this stuff is sickly sweet, but the notes of goat's milk and bourbon kept drawing me in. This one's for those with a serious sweet tooth Lemon Cream OR any kolache topped with tart fruit... Honestly, I only put this because the Bourbon Cajeta needs some Yin for its Yang. Pair the super sweet with any of the tangy, and you'll be double fisting these suckers like it's Spring Break 2005.
Now, I'm not saying their products are flawless. I was not crazy about the Chorizo and Egg kolache. The eggs were a bit overdone and the chorizo lacked spice. Aside from that, the Kolache Shoppe has left a lasting impression on me (and my waistline). I am determined to earn the status of Kolache Sage that I know can only be gained by frequenting this glorious lil shoppe. And that's a task I'm happily and gluttonously...
