Absolutely delighted to have found this place! Went for the first time last night. Small and homey, we were greeted immediately. The employees were all very nice and helpful. We had to wait just a few moments to be seated while they cleaned the only empty table there. We were lucky to have shown up when we did, shortly after we sat down the line of eager customers began to expand out the door and stayed like that until we left. The employees were super fast and attentive and did a fantastic job of keeping everything running smoothly.
We started with the shrimp egg rolls, which were hot, crispy and filled with a generous amount of shrimp. They came served with lettuce, carrot, cilantro and a dipping sauce that all paired together really well.
Next we both got the combination pho: rare steak, brisket, tripe and tendon, I believe. We were offered the choice of fresh or steamed bean sprouts which was really cool. Perhaps we'll try steamed next time but fresh was perfect. Both bowls came out quickly, steaming hot.
I cannot rave about the broth enough. Soul-warming. Very light and clear but with so much flavor packed in. I opted to drink all my broth rather than finish the meat or noodles when I started to slow down, it was that good.
I ordered a medium and fully expected to clean the whole bowl....I didn't come close. My bf almost finished his medium with a lot of effort on his part. I'd say if you're going to try an appetizer with your meal, go for the small.
For our egg rolls and two medium pho, we paid under $20 (before tip) and left ready to pop! Definitely a great bang for your buck.

Prices are really accesible, place is cozy and it’s open after hours so if you are the “let’s eat” kind of person after you had a party this is the place to go.
Owner is a dedicated, nice guy who is also locally famous in YouTube after this place was recommended by two popular foodies on a Houston’s Pho Restaurants report. He’s there most of the time with his wife assuring place is offering the best service possible.
This Pho tastes, smells and looks like a more authentic version of the dish. even though is optional... They will offer you the soup with the tripe and some other stuff that it looks they put in it when having the real deal in Vietnam, but majority of places here tend to remove to make it more “commercial”, which is understandable since tripes seem to be not that popular on this side of the globe.
Also something I found curious and not that common to see on other pho places is that they will give you the alternative of selecting in between steamed bean sprouts or fresh ones. Per the waitress that took care of me first time I went to Pho Binh by Night... is more popular in Vietnam to have them steamed.

You, as a customer, can get possibly better bowl of pho elsewhere during normal business hour. But when your choices gets limited down due to the time and you don't feel like driving further down Bellaire to another late-night pho restaurant, then you'll just have to settle for this.
My review is solely based on the experience of eating pho after 12AM on a Friday (I guess it would be Saturday if it's after 12AM!) night. My friends and I walked in and like majority of the Asian places, you just really seat yourself. The waitress already saw us and grab the menu and hand it over but I already know the pho I wanted (pho dac biet) and I ordered it right away with a cup of ice water. My friends took a quick look and ordered their food.
The service was fairly good as they did bring the water to us first. After that, the pho came out and yes, I was sober enough to know it's not as flavorful as the other Pho Binhs around Houston.
