Really struggled with a rating because for me 3 = adequate experience but probably won't return and 4 = positive experience and would be down to come back, and I honestly am not sure if I can see myself coming here again because it's kind of niche and the food didn't blow my mind...but I like the modern atmosphere and I did enjoy my order, so I'll give it a 4.
Anyway, this business is off Whitesburg Drive right next to Bonchon; iirc they're owned by the same folks but I might be wrong. The parking lot is a little hard to navigate. I went for a treat after getting my hair done about a week ago.
The menu most heavily features Japanese style soufflé pancakes, which are a good bit thicker and pleasantly jiggly compared to American pancakes. They also offer croffles, or croissant waffles, usually in the form of a sandwich for a more savory option, a couple of croffle eggs benedicts, and other desserts such as burnt-top cheesecakes and I thiiiiiink maybe macarons and rolled cakes with cream fillings (think Swiss cake rolls). They have coffee and a few speciality lattes to drink as well.
The inside was very clean and modern. It was pleasantly busy but despite seating being pretty limited I found a spot easily enough. You order at the counter but an employee will bring your food to you when it's ready. Service was a bit of a mixed bag. The person who took my order was pretty surly and disinterested, but the man who brought my food out to me and was bussing tables went out of his way to say a friendly few words to me and check in.
I ordered the tiramisu soufflé pancakes and an iced Nutella hazelnut latte. Both were quite pretty to look at and came out quickly. The latte was pretty sweet, which is how I like them, though not sweeter than the tiramisu pancakes -- I'd say an appropriate level of sweet for a more dessert-y coffee drink.
The pancakes themselves were, well, fluffy. They are quite different from American style pancakes but certainly have their own merits; subtly sweet, bouncy, and fun to eat. These came with a sort of chocolate syrup/drizzle in a pot for personal portion control, a sprinkling of pretty and ripe blackberries and raspberries, and a sweet and creamy sort of tiramisu topping. It all melded together into a decadent but not cloying meal. The order comes with two pancakes and I thought that was plenty to eat given how rich it was, though I did find it a little pricy.
Overall, I'd recommend this place as a good option to try soufflé pancakes -- I don't think they can be found elsewhere in Huntsville, so if you're curious, give them a go. I don't know if these are the best representatives ever given my own inexperience, but it certainly beats never having tried...

I am not one to complain, and I don’t think I’ve ever left a negative review before. The tiramisu pancakes were delicious! HOWEVER, I cannot remember a time where I had staff anywhere be ruder to me. I came in an hour and 15 minutes before close this past saturday. The place was empty when I came in. The two people at the front refused to talk to me at first, even after I greeted them. Then, I asked what “The Classic” was on the menu, because I wasn’t sure what was on it. The woman who was working just pointed at a menu and said “this.” in a really like peeved tone. I said “Oh, I’m torn between that or the tiramisu pancakes, because they both look so good!” When I said this, the guy at the counter just wordlessly rung up the classic pancakes and said “Anything else?”- he also sounded mad. I was like “I’m sorry I think I actually want the tiramisu pancakes.” I felt bad to change the order but I really have been looking forward to trying these pancakes. Anyways this did not go over well. They also seemed unhappy that I wanted to eat in but I was meeting a friend so I really didn’t have much of a choice. When they brought me the pancakes they set it down on the table kind of hard and just walked away. I like wanted to cry which is silly but I hate to think I really inconvenienced them. I don’t expect the very best service- if they were just nonchalant or just seemed tired I would never have mentioned it! But they were MEAN. Read moreWe visited this morning. We won’t return. We spent $50 and ordered 2 drinks, 2 meals (with one specification on one meal), and one dessert. Ordering went well, but what followed was appalling. We waited maybe 20 minutes for anything. When the meals arrived, we were given one drink. I mentioned the missing drink and dessert. The waiter said they’d check on it. We started to eat and my daughter’s breakfast sandwich was incorrect. She had an allergy specification. No problem. I returned it to our cashier and the manager was hovering over their shoulder. The plate was yanked from my hand with attitude. I like to believe the best of people and I sat down. I waited to eat with my daughter, but she told me to go ahead and stop waiting…She didn’t want my food to get cold. She was sweet. Well, twenty minutes later, I finished eating all of my meal. Then her food arrived. I mentioned our missing drink and dessert to the second waiter. This person immediately returned with only the drink. No dessert. My kid opened her breakfast sandwich only to realize it wasn’t remade. We waited another twenty minutes for them to scrape apart the sandwich and put it back together?!? Okay, I was livid. I wanted to leave. My daughter mentioned our missing dessert. She went and asked. Then we had to wait… yet again. The waiter finally brought the dessert.
