The food at this place is spectacular & the employees are also fantastic! I was in town getting my son situated in his college dorm & I needed some really good food. I'm not a burger or taco bell type of person so after asking around about various choices someone recommended this place. I went up a little before dinner time just to check out the menu in case my son & I decided to have dinner from there after his football practice. I talked a bit with Miguel and told him that I would be back around 7 or 715. He asked what I might want so I told him. My son & I returned around 715 & it was very darn impressive that they had my order ready! The portions were huge & we just couldn't believe the price compared to the food prices here in Las Vegas. My shrimp hibachi was really good and my son also enjoyed his steak. Considering the bad experience that I had at one of the hotels in Independence this small food truck made up for it & gave me hope that there are people who understand & believe in offering good customer service. My son said while he's there for school he'll definitely be visiting this truck again. Thank you Saiko Sushi & Hibachi & I wish you all the continued success you desire! Sincerely, Kisha

I've moved to indy for a year and safe to say this place singlehandedly carried the whole food scene of the city to be honest. I've never had any food in indy with such fulfilling portion, nice seasoning and so delicious sauce. The appetizers such as crab rangoon/veggie spring rolls dipped in the hearty sauce is literally heaven !! I bought 3 hibachis to eat over 4 days and couldn't finish either of them, the hibachi portion is filled to the trim. Rice & noodles very well-cooked, the salmon hibachi is definitely worth the wait as its so yummy when eaten with saiko's sauce. Their matcha boba tea has the real matcha bitter taste, very nice. The rolls are alright i dont like american styled rolls in general so yeah

It was 3 of us. 2 of us had hibachi chicken and shrimp. The other had hibachi chicken and steak. All 3 were with rice. I'd say they give a very good amount filling the box worth for the amount you pay. If you want pop/water, you can buy those there as well. Though they're a food truck they still have some seating right there if you're coming from far to sit and eat. The cashier was so sweet and was also Japanese. Their sauce is a killer. It was so good! And their food overall is also good. From steak, shrimp and chicken I'd say steak was the most tastiest, but the steak was also pretty chewy. Maybe it was just that day. Overall it's a place with good food, good amount for the price and good vibes.

It was 3 of us. 2 of us had hibachi chicken and shrimp. The other had hibachi chicken and steak. All 3 were with rice. I'd say they give a very good amount filling the box worth for the amount you pay. If you want pop/water, you can buy those there as well. I can say that if you gave this a low rating, your to damn picky and don't know what good food is. I've eaten at a high end restaurant in Denver Colorado, serving some similar sushi rools but the fried rools are to die for here, and unique, I can say it was well worth the price and I can honestly say from out of a food truck, it was way damn better then the restaurant I went to. The duck tales rool and Pokemon rool is 🔥. The crab Rangoons 🔥, and they serve bulgogi which I looking forward to trying soon. This is probably the best thing that has hit independence Kansas after leaving for 6 years. For sure will be returning every payday just for a bite to eat. New favorite spot to some...
