You and another lady made my tacos the other night and yall were so kind. I have passed by your truck 1 million times and something told me to stop this time. I am so glad I did. âEven though your tacos are a bit more expensive than the ones on Highway 6, Iâd gladly pay the extra dollar any day. They were fresh, savory, and absolutely delicious. Most importantlyâmy stomach was perfectly fine the next day! And my super picky kids loved them! That says a lot. You made my tacos the other night and were so kind. I am an elementary teacher and Iâm looking to do something just for the summer and then we can find somebody else to run the location during the school year and then I pick back up in the summer.    Read moreI just wanted to put up a review on the quesa birria tacos. I looked and looked the other night for a good review of them before ordering and I didn't find one. Therefore I didn't order them. So I got brave today trusting the Ruby truck long history of not disappointing us , hardly ever and ordered the 3 pack of the quesa birria tacos with consumé. Let me tell you, the only reason I don't have a picture for you is because in order to tell if I wanted to review them or not I had to test them out. Well sorry folks I didn't want to stop eating them. They have taken the first place for me out of all the local places that I have been to. If you want a taco that's a little bit different but absolutely delicious try them. Throw on a little onion and cilantro with a little bit of all the salsas. The style of the tacos is a traditional street variety, with small tortillas (you can specify corn or flour) with your choice of meat and onions and cilantro. They also offer a selection of tongue-melting sauces (I prefer the green), and the selection of meats is nothing to sneeze at. My favorites are the chicken, milaneza (breaded beef), and barbacoa, though if you want something a little more exotic, they also offer lengua (tongue) and tripa (intestines). They're open 24/7 and have things pretty well-lit, so I've never really felt unsafe being out there at two in the morning, despite it being right off 290.
You might be a little put off by the decor since I'd consider it eclectic at best and because it's an outdoors location (thus dirty because it's exposed to the elements), but I've never had any issues with the food whatsoever.
