The ingredients were chosen wisely to highlight the fish. There was very little use of heavy sauces and unnecessary garnishes (which can sometimes overpower the sushi). They were extremely conscientious regarding a food allergy and made sure to put us at ease by explaining their process of preparing the meal in a way that would minimize allergen exposure.
