Driving up to Si Señor Flavor of New Mexico on 4130 White Sage in northeast Las Cruces, I was immediately drawn in by the thoughtfully designed architecture and landscaping. The familiar fountain out front brought back memories of the original Si Señor. Though it was not yet noon, a good number of diners were already enjoying their meals in the dining area. Inside, the decor struck a perfect balance, capturing the grandeur of the original Si Señor while seamlessly blending it with a modern, takeout-diner flair.
Stepping inside, I was immediately enveloped by the rich, inviting aromas of fresh chile, beans, and warm bread and sopapillas—the quintessential scents of an exceptional New Mexican restaurant. I was greeted with genuine smiles and a warm welcome as I placed my order. Seated, I admired the decor even more, and after a brief wait, my meal arrived, every bit as delicious as what I remembered from the original restaurant. It was clear this food was prepared with the same care and from-scratch authenticity that cannot be faked. The green chile was divine, featuring perfectly cooked cuts of beef, while the rich red chile that screams fresh and pure, with its succulent, perfectly prepared pork, created an even better chile con carne. The spanish rice, the familiar Arroz Castillo, and the freshly cooked beans offered the same comforting, uniquely homemade taste I had cherished at the original Si Señor.
I had the distinct pleasure of meeting Sergio Castillo, the esteemed grand patron of Si Señor. A true connoisseur of New Mexican cuisine, particularly chile, Sergio's passion for the food served in his restaurants is evident in every fiber of his being. He meticulously sources ingredients from local farms, with his chile coming from a single farm in the Hatch area that meets his rigorous standards for quality and flavor.
I also had the honor of meeting his son, Diego Castillo, who manages both restaurant kitchens. Diego shares his father's dedication to quality. His appreciation for the nuanced flavor and "bouquet" of the chile, which he believes cannot be improved, was music to the ears of a chile farmer's grandson like myself.
My tour of the kitchen at Si Señor offered a fascinating glimpse into their culinary philosophy. It was a marvel of efficiency, yet absolutely no corners were cut in preparation. The owners and staff were actively involved in every aspect, guaranteeing consistent quality and flavor in both preparation and presentation. Their movements were like a well-oiled machine, a testament to their teamwork.
The air was filled with the unmistakable aroma of fresh red chile, the scent of baking bread, and the preparations for corn tortillas and sopaipillas. Everything was made from scratch. The rich smells of fresh beans and Arroz Castillo were also present, assuring me that any dish ordered from Si Señor would be made with fresh, scratch-made ingredients, free of shortcuts or fillers.
"This is my life," Sergio declared, proudly gesturing to his kitchen. It's clear that this space along with his original restaurant, embodies not just his life, but his soul and the love he shares with his family. I would drive there to get at least half the quality and smile than none at all at the White Sage location. At the White Sage location it took 35 minutes for two orders of menudo, and this is the "Express" location. Does the company actually "interview/screen" the employees working there? Its seems more like a "play center" for teens, this includes the so-called shift manager on duty. No courtesy or smiles towards customers, each time I felt we were an inconvenience. This was the third time ordering menudo and NEVER AGAIN. Spent over $30 dollars for "salty hominy soup". It had so much salt my stomach started cramping. It also tasted like chicken broth was probably added to "stretch out" the menudo on hand. We had to throw everything away. I dont care how many dips and chips you give for free with meals, its NOT worth...

They immediately called this location to figure out what I ordered and they delivered it to my hotel. No extra fee, no arguing, no idiot tax. Just a these things happen and have a good night!
Columbus Enchiladas and Mole Chimichanga is what we ordered. Even with all the mix up on my part, food was received still hot. The egg on the enchiladas was cooked perfectly the way I like it. The hot green chile sauce was not too spicy, but enough to get the nose running, and was delicious. The Mole Chimichanga was huge! Barely able to be finished and certainly left us stuffed.
