Smoked meat should be slightly pink in color towards the center and browned on the outer. If you say you smoked the meat, you must be using a pellet style smoker and using odorless pellets. I know Oklahoma is short on trees, but they do ship oak, pecan and hickory to all 50 states. Smoked BBQ meat has a unique taste depending on the wood used and the spices cooked into it. Sadly your ribs appeared to have been boiled, and then seered in a oven. Not sure what spice or condiments you used but they were tasteless. I have won numerous BBQ contests so maybe my expectations are high. I will say the beans and slaw were okay, but they arent supposed to be the center point of the meal. I gave this response because the brisket that I received in my order was tough and the smoking process used didn't allow the smoke to really absorb into the meat, which to me suggests that it didn't smoke long enough as well as cook long enough to tenderize the meat. I almost thought it had been boiled instead of smoked.
The sides I ordered were the baked beans and mac n cheese. The beans tasted like they were opened out of a can and heated up, not tasting very fresh as stated that they are made fresh each day. The mac n cheese tastes heavily of american cheese which is very cheap and lack a good quality flavor. On top of that the pasta was clumped together and stiff so it was more like eating a heavy gob.

Me and my family decided to go here for lunch and one of my kinfolks ordered a baked potato and let me tell you that s* looked and smelled delicious. I would have got a picture but I was too busy eating my brisket and enjoying conversation with my family. I believe my brother-in-law got some ribs and man let me tell you it was looking good nice thick meat on the bone came off very easily tender meat good. Oh and they're sweet tea trust me when I tell you was sweet. It definitely hit the spot here in Lawton we only have a few barbecue places from what I'm aware of and Billy Sims is definitely number one to me.
