I was pleasantly surprised by this newly remodeled location. The decor, particularly the lighting design and fixtures, are gorgeous making this a phenomenal spot for a date, romantic gathering, or a pleasant time with someone you'd like to converse with over a meal. I found the food to be excellent, the Chef has reimagined Mexican cuisine in an appealing way. The presentation of the dishes certainly make a great first impression and the flavors do their job in delighting the palate. The cocktails are enticing, creative, and there is something for everyone. While I understand this restaurant is somewhat newly opened and still working on itself, I am happy to include it into my rotation as I have seen continuous improvement after visiting it on three separate occasions. I am particularly happy that with this restaurant's addition into the downtown Los Gatos food scene, there are now 3 main players for Mexican Cuisine (Zona Rosa, Andale, and now Pedro's). All 3 locations have very different options and positioning for those seeking Mexican food. One thing that I like about this location is that it is right across the street from the "Electrify America" charging stations in the Bank of America parking lot. This makes it an enticing proposition to grab a margarita, chips and guacamole while your car is charging. Or, Why not have a bowl of Pozole instead at the bar counter while watching your favorite team on the TVs? I also noticed that they have a great spot/stage(?) for potential live performances or presentations. Additionally, there is a phenomenally looking table in the back area of the restaurant away from it all that can provide a wonderful area for a corporate or family gathering. If there was one thing I would recommend the management to do, it would be to spend more focused time on training the serving staff with a consistent program so that the service matches the rest of the restaurant's positioning. This is where I see some inconsistency which can be addressed. You got your decor down, your ambiance is spectacular, your menu is looking and tasting great, now make sure you implement your signature service plan with your serving staff. A redesigned interior transports you to a luxury villa from the 80's, decorated with intricate details such as arched doorways, gold hardware, and lush green palms.
Their revamped menu keeps things short and sweet, with a beautifully tailored selection of Pedro's best dishes. Their cocktail menu brandishes some tried and true classics, such as the witty 'Pinche Paloma', a beverage that we found to be better than your average Paloma. Keeping things fun and unique was a beverage I'd never heard of before - the 'Mamey Mi'. Featuring mamey and condensed milk, this cocktail was rich, creamy, and delicately sweet. This is sure to be a fan favorite.
The food was nothing short of amazing, as to be expected with a restaurant that seemingly focuses on all of the details. Chiles Rellenos with a uniquely crisp exterior, sizzling Fajitas full of flavor, and tender Pork paired with a delicious salsa. Each plate containing the perfect amount of food without being too little or too much.
After our beverages and meals, we found ourselves in the mood for something sweet. The dessert menu features some of the softest, most divine Churros you'll ever have, served with a side of Homemade Chocolate Sauce and Whipped Cream. I myself settled for their Popcorn Infused Flan, a beautiful combination of flavors that satisfies every sweet tooth you have.
The most important part of a successful restaurant, apart from the food, is their service. Every host and server was gracious and kind, constantly ensuring that the service was to our satisfaction. Throughout our dinner, we had a staff member check in for refills, help take away any finished plates, and wipe down our table as we prepared for dessert. This made for a pleasant and delightful experience.

Read moreWe reserved seating in the back of the restaurant for our 12 person party which we found out was given away when we arrived at the restaurant. The food here was OK. Nothing to write home about, not as good as places in So Cal, places in Santa Cruz, or even local chains. I ordered Chicken and Shrimp Fajitas, which had 5 small pieces of chicken and 4 shrimp, less than 3 - 4 ounces of meat total between the two. The diet coke I ordered for the meal sat empty for 20 minutes until I had to grab a server and ask for a refill. My wife's chicken tinga wasn't as good as the version they serve at Google for free - no spice, bland flavor - and the enchiladas my mother in law ordered were tiny and cold. The manager ended up having to bring out the meals for each of us 2 at a time. Some of us sat for minutes on end while a few of us had food. My sister in law didn't get her food until a full 15 minutes after the first of us had received our order. I could ignore and forgive all of this, and still give the restaurant an average rating of 3 stars. What isn't OK is when the restaurant adds a 20% service fee to your order, and then doesn't use that money to tip out their wait staff. We had an original bill of around $320.00, which went up to just over $380.00 with the restaurants service fee. We paid, only to get chased down out the door by our waitress DEMANDING an additional 20% tip because 'she wouldn't get any of the 20%' service fee we had paid. So we ended up paying the bill, paying the 20% tack on, and paying ANOTHER 20% tip on top of that. So does this restaurant seriously expect us to pay a 40% gratuity? (more when you realize that there was a 20% charge on top of the bill + another 20% of that cost for the waitress). Will never eat here again and I advise large...
