Taqueria don pancho — Restaurant in Madison

UPDATE: 5/19/2024 I do not know what they did but they sure turned this ship around! I went there for lunch today and was served a magnificent meal of Birre Tacos. A complete 180 from my first visit. New chef? New manager, I don't know or care. The food is awesome. I look forward to coming back. I posted pictures of my meal and I will let that do the talking. Very good.

¡No sé qué hicieron, pero seguro que le dieron la vuelta a este barco! Fui a almorzar allí hoy y me sirvieron una magnífica comida de Birre Tacos. Un completo 180 desde mi primera visita. ¿Nuevo cocinero? Nuevo gerente, no lo sé ni me importa. La comida es increíble. Tengo muchas ganas de volver. Hole in the wall Taqueria with some ridiculous prices (high) for below par food. I went in today and the special was three (3) Birria tacos with rice and beans for $16.00... Hum? Instead, I ordered three (3) Birria tacos for $9.00... So I guess that a serving of rice and beans goes for $7.00? Not in my country. The food was kinda bland and tasteless even after adding “hot sauce.” The kicker was having to wait an inordinate amount of time, over 20 mins to get my food despite the place only having seven (7) tables and half of them were open. Small shopping center Mexican food, recently updated menus. Your food and portions depend on who's cooking. Service is patient and friendly. Food on my first visit was pretty poor. I got the taco mix and only the pastor was edible, the rest of the meats had a hint of good flavor but were dry and crunchy. Friends had a pretty good experience when they came in. They mentioned the food was better and portions were larger when they came in and the Mamacita was in the kitchen. I decided to give them another try. Went for lunch and dined in. Food is absolutely amazing from this small little restaurant. I had the Machete and it was delicious. I can't wait to try some of the other dishes.

The decor is very bright and inviting. It seems they did the best job they could with the small floor space they had. They have extremely limited seating, so it might be best to order to go if the tables are filled. Service was good and our food came out really quick so don't let a line to order detour you from ordering.
