This Peruvian ceviche is soooo so so good with his signature rocoto sauce. Definitely recommend you try it! It’s served with choclo (a Peruvian corn) and cancha (corn nuts) sweet potato, and garnished with a little bit of red onion and cilantro and served with a side of corn chips.
