We decided to try Redbird Pizza on a Saturday night (2/22/25). The menu is pretty limited to 10 or 16 inch pizzas, 2 desserts and a handful of bottled drinks. I wish they had garlic knots or breadsticks. But, I wont hold that against them. We ordered our food through the website at 6:00pm. We ordered the 16 inch, "Toussaint" that comes with, tomato sauce, the mozzarellas, blue oyster mushrooms, shallot & parm for $26. I added pepperoni for an additional $2.50. In addition, I also ordered the 10 inch "Carm" (white pie) Carmelized onion puree, fresh mozz, whole milk mozz, whipped lemon ricotta & lemon basil oil for $11. I arrived at 6:12pm and waited outside until 6:20. When I ordered online, the Toast app stated it would be ready between 6:20 and 6:25. When I entered, the place was clean but dimly lit. Music was played in the dining area which included a bar with seats and tables for probably 30. 2 people were making pizzas and 1 was working the register, running pizzas to the tables, garnishing the pizzas with fresh basil and preparing orders. At about 6:22, there gentleman doing orders asked me for my name and started talking with the people making pizzas. He then told me, "your ticket is up and it will be about 8 minutes". I'm easy to work with and said, alright. At 6:30, I saw them making my pizza. I went to the car to wait. At 6:38, I went back in and they were pulling my pizzas out of the oven. By 6:40, I received my pizzas and left. Aside from being 15 minutes late, I think the thing that bugged me was watching a few people walk in while I was parked, order, leave, came back and they were served first. I can only assume they were probably regulars and got priority, but this was my first time and it wasn't a good look. As for the pizzas, I've added pictures for you to see. The "Toussaint" is their "mushroom pie". Call me crazy but I really expected the "mushroom pie" to really feature the mushrooms. I really felt like it would have a decent amount. However, I was actually disappointed. I felt the mushrooms, pepperoni and cheese were all very skimpy. Please, look at the pictures and make up your own mind. I will say that the dough was crispy and chewy. The crust itself was a 10 out of 10. It's kind of like a New Haven style. The sauce was pretty good too. But, where the crust and sauce were a win, the lack of toppings was a disappointment. The second pizza is a 10 inch "Carm". Again, the crust was great. The pizza itself has a carmalized onion puree as the base. They then add mozzarella, a lemon ricotta and a lemon basil oil. In the picture, the blotches of white is the whipped lemon ricotta. The pizza itself really didn't taste like anything. The only thing you can taste is a very mild tart from the lemon in the infused oil and ricotta. I wouldn't recommend it. All that said, I was disappointed in my experience at the Redbird. I imagine the pizzas are made from quality ingredients but I didn't feel the value was there. I was disappointed in the service because I felt that had I not been there , they likely would have forgotten about me or not prioritized me at all. Just had a slice of heaven fresh out of the oven at Red Bird Pizza in Miamisburg—and let me tell you, I may never recover. • Crust: Thin, crunchy, perfectly blistered. Straight-up artwork. Not a floppy slice in sight. • Cheese: Real mozzarella doing what mozzarella should do—stretch, melt, and make you close your eyes after every bite. • Toppings: Fresh, bold, and stacked like they actually care what goes on your pie. • Oven: Baked the right way. You can taste the soul in every slice—no conveyor belt nonsense.
And yes—I ate it there this time. Hot, crispy, and glorious. Life-changing.
Even got to meet the man behind the pie, Christian Clothier—a former pro photographer who swapped lenses for ladles. Not only does he make killer pizza, but he gives back, donating part of the proceeds to charity. Good food with a mission? Count me in twice.
Final Score: 9.5/10 Only thing missing was a second stomach.

Read moreEver since I moved up to Dayton I’ve been looking for a place that makes a solid East Coast Pie. (There used to be a place in Centerville called Kings pizza that closed down about 5 years ago that was very good) Let me tell you…Red Bird Pizza has nailed it. The crust is crisp but light and fluffy. You can tell they make their own sauce and use whole milk mozzarella on their pies because the flavor really comes through. Add in the crispy cup pepperoni with fresh basil (I watched them pick the basil off of the plant) and you have a spectacular pie that is head and shoulders above all other pizza you can buy in Dayton.
We need to get Dave Portnoy to Red Bird Pizza immediately because it deserves to be heard and will get a great score. I’ve eaten pizza at John’s of Bleecker St. and Angelos in NYC and it goes toe to toe with those two establishments. It really is that good and it’s crazy that there is a place serving up pies this good right down the street from me in Dayton, Ohio.
