Wonderful beers. Great potato chips. Stylish decor that reminded me of Mikkeller in Copenhagen. The beers here have a more delicate balance than most breweries. It’s surprising that Rob has found the balance of flavors and acidity to produce a variety of beers so soon after founding and on small volumes. Fans of traditional lambics will be happy with the beers here. Lots of subtle flavors and a balance of body, dryness, and aromas. It speaks to a good process and not just a blending of Cuvee barrels. This brewery is the opposite of slushy IPAs and pastry stouts. It’s a brewery that will open the eyes of folks that appreciate wine and challenge their perceptions of what flavors can be expressed in a glass. My group of friends and I had a really nice time trying their great selection of brews and I even took home a bottle of Saison Bay View for later on.
