I was really hoping to love this sandwich, but it just didn't do it for me. I got the big dipper and was unfortunately, disappointed. First impression was the bread was disappointing. It was thick and dense, like a big Mike's sub. Maybe that's the style these places think is best, but when I'm trying to get into a French dip, I'm hoping for something that is soft and chewy even when it gets wet. The dip shouldn't have to save the bread, though. Secondly, and maybe most offensively, after I took two bites out of my sandwich, I literally questioned if I had covid or not... Were my taste buds failing me? Why does this thing taste completely burnt? I opened up the sandwich to find my onions to be not so much caramelized, and really just straight up ashed. Burnt passed being edible. I'm literally picking these out to even try another bite. What a bad taste in my mouth...

I'm going to give this place another try, because I really want them to be better than this, but not happy with...

This was a nice place to try out for lunch. I got the vegan Red Beet Reuben. I really enjoyed the bread, sauerkraut, and dressing. Beets are fine. I generally like all plant foods, but unfortunately beets are one that I really need to be in the mood for. The other vegan option was also beet-based. I'd really love it if they could make an option for vegans without beets. The grilled broccolini, zucchini, and pesto sandwich looks like it would be right up my alley! Unfortunately, to make it vegan the pesto would be removed, and would really put a damper on the flavor profile of the sandwich. I'd be so happy if they found a way to leave out the parmesan from the pesto, or to make another plant-based basil spread. Overall, I'm super appreciative of the vegan options, but just wish they weren't both...

Truly a great addition to the neighborhood! From the start it's been clear they are serving great food with great service. Right now they serve sandwiches or grain bowls but it seems like they have plans to broaden the menu to include soups and more in the future. While they have vegetarian options, their main selling point is the superb meat (Pit beef, turkey, chicken, trout) they pack into the sandwiches. My favs are the Turkey Pastrami Reuben and Grilled Chicken Hot Club. Everything is served with chips that are very thin and generally crunchy (sometimes chewy). Would recommend having some napkins nearby as it is likely the sandwiches' structural integrity may fail...

A good sandwich place is surprisingly difficult to find, but the brand new Carbon finally fills that niche in NE Minneapolis. And it fills it in an impressive manner! Envisioned to be a restaurant that makes all its own meats, sauces, and such, it will also sell you its products like a deli. I had the beef Rueben and my friend had the Rachel. I am confident there are NO finer in the Twin Cities. It’s owners also run catering and some food trucks and this is their first venture into a brick and mortar shop. It’s grand opening is Wednesday January 12; it looks great and has plans to include outdoor space in the future. Go now! Hurry! This will soon be the hottest spot in NE MPLS!
