Nestled within the vibrant culinary haven of Eat Street Crossing, Hikari is not just a restaurant—it’s an exquisite journey. From the moment I stepped inside, I felt transported to the bustling yet refined izakayas of Tokyo, where each dish tells a story of craftsmanship and tradition.

The rolls at Hikari are nothing short of an art form. Each bite is a harmonious symphony of fresh ingredients, meticulously balanced to let the natural flavors shine. The spicy tuna roll is a revelation—velvety tuna accented with just the right amount of heat, while the dragon roll is a decadent dance of buttery avocado and unagi that melts in your mouth.

But where Hikari truly shines is in its hand rolls. Served with the warmth of freshly toasted nori and brimming with fillings that evoke memories of Tsukiji Market, these hand rolls feel personal, almost intimate. The salmon hand roll, with its delicate interplay of creamy salmon, crisp cucumber, and perfectly seasoned rice, took me back to a small sushi bar I stumbled upon in Ginza, where the chef handed me a roll with the same thoughtful precision.

The care and authenticity at Hikari are palpable, reminding me of the distinct flavors I experienced in Tokyo—from the simplicity of a single piece of nigiri to the bold umami of a simmered dish. Hikari somehow captures the essence of all those tastes, blending them into a singular experience that feels both nostalgic and refreshingly new.

Hikari isn’t just a meal; it’s a love letter to Japanese cuisine. For those who yearn for a taste of Tokyo—or those simply seeking an unforgettable dining experience—Hikari delivers in...

Edit/Update (03/13/25): Took another group here for a friend’s birthday ~ at this point, I’m just looking for excuses to come back. 😂 Everyone loved it. 150/10 (đŸ‘ˆđŸœ cumulative collective rating from all the groups I’ve brought so far).

Edit/Update: (03/8/25) Recently visited again for my brother’s birthday—honestly, I can't think of a better place to have taken him. Do I dare say the food has somehow gotten even better since my last visit?

I’m planning on adding a star for every time I return, so stay tuned. Currently at 105/10, and already looking forward to my next trip!

The only disappointment? Myself—for not having the capacity to eat more of the incredible food.

Original Post (02/26/25): If you’re searching for a sushi spot that delivers on the goods, look no further. My friends and I travel across the country exploring different omakase experiences, hand roll joints, and sushi bars, and we’ve been searching for a true home base in Minneapolis ~ This place is it.

Jason is an incredible chef—his dedication to providing a good experience & sourcing top-tier ingredients (imported seafood) sets this place apart.

Every hand roll I had was fresh, well-balanced, and absolutely bussin.

The price point? Great. The service? Top-notch.

You can feel the passion behind his work, and even during the soft opening, it’s clear they’re destined to do great things.

If you love sushi, do yourself a favor—visit now before it becomes the next big thing. 100/10. Will be...

Great sushi 🍣, staff, and good atmosphere. I had the rainbow 🌈 roll and my wife had the sexy salmon roll (which isn’t that spicy) - both were really good đŸ‘đŸ».
