Chef Lan is an amazing chef. He turned SPAM into a delicious creation! The SPAM was grilled, topped with a pineapple sauce, and served with a mushroom-vegetable quinoa, and tortellini. The SPAM was extremely tender! I cut it with a fork. The pineapple sauce was sweet without being cloying. There was a subtle hint of spicy heat initially and after swallowing. The mushroom-vegetable quinoa was silky smooth. The quinoa was crunchy without being undercooked.The tortellini were pillows of cheese-filled lusciousness; buttery without swimming in butter. This dish was a fusion of flavors, textures, and spices!
