Hard to rate BBQ when you love BBQ just because it's BBQ. There are definite standout options here. However, I'm just going to leave all that aside and say this:
Mac and Cheese.
Hands down the best Mac and Cheese I've ever had in my 40 years of Mac and Cheese tongue fondling. I don't get what's happening in my mouth with this one. I mean this beats out any other BBQ Mac, and steak house Mac, the old Mac Shack's Mac, all of it. It takes all those counterfeit Mac doppelgangers and fires them from the team and says "watch how this is done from the bleachers. I'll show you how it's done."
Mac - noodle is perfect. Not Al dente. I don't want a crunch with Mac and Cheese. It's not soggy either. Often times when you get this style, it is a floppy limp noodle in an overcooked trough full of Velveeta-esque coagulation of goo. Not here. It's still intact! Its forkable, but not hard. Solid!
Cheese - what is happening here? Seriously. It's not too cheesy where you're prying it off the roof of your mouth like a dog after being given a spoonful of peanut butter. It's not too creamy per se, where you know the butter and cream is going to lead to a churning stomach like your aunt's terrible stroganoff mix she claims is homemade; but you watched her tear open and shake in the McCormick mix. I say nay nay. This is part cheesy, part creamy, and a hint of something I sincerely can't place. It combines savory with a after taste settling on slightly sweet. Amazing. Simply amazing.
I could say more about the other things I have tried but why? Go there for the Mac and try other things. You'll like it, regardless. Just go, please.

Read moreBeing from Texas normally I would not get BBQ in Las Vegas but I came in to get the Fortress as it is a very unique item you can't find anywhere else.
First off this item is way bigger than it looks in pictures. It is a lot of food. Most photos only show the item as it looks when it first comes out, not "unpacked" when you empty the contents inside of the rack of spare ribs so I provided some pictures to show what that looks like.
I was able to finish it all by myself but the waitress told me she has been working there 3 years and sells about 25 of them per day and I was the 3rd person she has ever seen that has been able to eat it all solo. She said regularly that 2 or 3 grown men will come in and order it and won't be able to finish it together. To be fair I am training for a full Ironman and had come in to eat straight off an 85 mile bike ride and 6 mile run that I had already done that day.
The brisket and sausage were very good by the Texas BBQ standards I am accustomed to, and the sauces were good. The spare ribs were also good. I'd love to come back and try the Waffle Fries and Mac and Cheese standalone.

Vegas is trying hard with all these BBQ joints and most are just ok or lacking in some way . I haven't found a to die for place , but this place is at the top . I have to say their Pig Sweat Sauce is the best Carolina Vinegar sauce I have had in Vegas . They also have Fallen Angel , Slammin Bama , Carolina Gold , and God Sauce . Fallen Angel has a little kick which I like .
My favorite is the House of Three Sandwich which is Pulled Pork , Brisket , and a Hot Link . I always get the Bbq Mashed Potatoes as my side . I have had the Waffle Fries too , but love the Bbq Mashed Potatoes . I have also had the Pork Ribs here and a Big Beef Rib once . Also had the Chicken . I have tried all the sauces too . They are all good . I recently had the Belt Buckle - Brisket on top of Bbq Mashed Potatoes which was really good and filling .
