I love sushi rolls, especially single ingredient rolls like salmon and yellow tail rolls. And I have not seen a cut this clean for a VERY long time.
I'm not talking about the quality of the ingredient, i'm talking about chef's knife skill. Every seaweed outside roll has a large chunk of fish. Every single piece from the same roll was cut into the same height and length.
It's very difficult to achieve both qualities i mentioned above. a lot of the new chefs cheat by putting smaller chunk of fish inside the roll, so the roll doesn't burst. And very few chefs i know is able to cut the rolls into equal sizes.
