My fiancé and I came for dinner on a week night. Not much atmosphere here givem how small the place was (it looks like it would be better suited for take out/pick up orders as opposed to dine-in) but we decided to stay and try it out given all the rceent buzz about this place.
We each ordered hand pulled noodles with cumin beef, and shared a cucumber woodear mushroom salad and an order of pork soup dumplings.
Noodles were on the thick side (even for hand-pulled) and slightly raw in some spots. The beef was mildly seasoned with cumin, and the entire dish was swimming in a bowl of flavorless (chili?) oil. We tried to zhuzh it up with some extra chili oil and sriracha but no luck - the dish was still underwhelming.
Soup dumplings had no soup but were instead filled to the brim with meat. Maybe they mixed up our order? Either way, they were also underwhelming, and one dumplings even had a piece of blue plastic stuck to the bottom, leading me to suspect that it may be a pre-made dumpling and not house-made.
As a saving grace, the cucumber woodear mushroom salad was good. I ordered this as a safety pick since it should be nearly impossible to mess up (and I'm glad I got at least one appetizing dish).

We got there at 6pm, was told that we only had an hour because of a 7pm reservation. No problem. We sat down, ready to order, and their Chowbus system was not working. We couldn't place our order until almost 6:30pm. This was not their fault. However, store team should have adapted quickly to resolve the issue simply by taking down orders by hand. Poor management. The hotpot overall was fairly pricey. Sauce was $2, and everything was $3 and more. Now, I know everything was more expensive right now, but their portion was just ridiculous. $6 for shrimp paste, and it was 3 small frozen chunk. Handmade beef ball was also frozen, and just a chunk of ground beef with some onion inside. Portion sizes were absolutely pathetic. Sliced meat portions were also very small, and charged $6 for them. Spring Shabu was cheaper with larger portion.
Reservation and system down were not their problems obviously, but low quality foods and high prices were definitely their problems. We could have stayed longer, but we still finished by 7pm per their request. I won't...

Large portions of perfectly cooked noodles that had been worked perfecly to have a resistant, firm bite but were silky smooth on the inside. The noodles were served with no or very little chili oil so i asked; they have a self-serve station where you can customize (load up on) the amount of chili oil etc. that you like. This is a typical noodle shop like in China but not a typical American Chinese restaurant catering to American tastes (not sweet/not bland). Its small, loud, fast, and fantastic. There's a couple seats at the window when you walk in and more at a counter along the wall. People move through fast so if a seat isn't available just wait a few minutes. It will be worth your wait.
