If you want a totally unique pizza experience I implore you try Dolomiti. This pizza EATS! This is vibes. The crust slaps. The pizza oven they are using, imported from Italy, is a rotating wood fire AND gas operating oven. This allows Dolomiti to have exacting control over the temperature of their pies while also getting the delicious wood fire flavor. What this means for you is that the pizzas are cooked perfectly each time. No inconsistencies. This is not a drill folks. You better come locked in and ready to savor. We got three pizzas here (the Zucca, Rústica, and the Patata) and each one was cooked to perfection. The Patata was topped with pancetta and sliced marble potatoes that were about as thin as two or three pieces of paper stacked together. The Zucca has crispy kale and perfectly thin squash that lends a mild sweetness. Unlike Neapolitan pizzas where the center is often soft and soupy, Dolomiti effects a bubbly Neapolitan shape and thinness, BUT with superb crunch and texture. You can hold up a slice and see that it holds its form - no flopping. If you’ve ever tried making a pizza from scratch you can understand what a miracle this is. The sour dough base comes through beautifully. Full flavor, a balancing tang to the Smokey wood-fire char. Ma this is it! But honestly, the Miso Radicchio salad, it almost stole the show for me. The staff was very attractive and very hospitable. The chef owner Tim came over and told us all the secrets about how he managed to make pizza on this level. This pizza is for the real ones only. Truly my only 'room for improvement' comment is just about hopefully getting some additional signage. (Which expect is still-coming, since they're new to the area!)
The ambiance of the restaurant is so fun - we saw a diverse collection of visitors from young families to couples, ranging from casual to dressy and no one seemed out of place. The space is very open, with some beautiful touches like the large plants in the entry way, an adorable bar cart for a "hostess" stand, and some fun tiling in the center of the dining area. But you won't make it very long into your visit before you also admire the gorgeous and super unique pizza oven in the open kitchen space.
We were visiting for a quick and light lunch, so we opted to try the winter salad and a single pizza, the formaggi (need to double check the ame!) And both were delightful! The pizza crust really shines, chewy and flavorful and still crispy and light! The cheese and other toppings were exactly as expected!
For me, the real star of the show truly was that winter salad. What a delight! We were told done of their items are seasonal, though I don't think we ordered those ones that night.
I would recommend their meatballs 4.5 stars. Tastes great, quite moist, and generally just everything you are looking for. I just didn't care for the toast on the side.
The rustica was my favorite of the night for the pizza run we did. The flavors are very good. 4.5 stars. A little crisp with a good chew.
The beet salad however was my favorite thing of the night. I loved the combination of flavors. Citrusy, sweet, creamy, it had a bit of everything in good balance. 5 stars
The only issue we had was the dessert. 3.5 stars. We did let them know and they said they would look into it. The blood orange flavor didn't really come out. It was lacking something for me.
