This restaurant is located inside the cotton wood Hotel, within the Blackstone district. There are a few free parking lots around, but I'd recommend you take advantage of the free Valet parking that comes with dining in the restaurant.
Excellent service in our first visit with average on the second. Beautiful ambiance in one of the oldest hotels in Omaha.
On our initial visit we did find a few issues, but they were a new restaurant (open only for a couple of months) that needed a bit of time to work out the kinks.
We returned recently when we found out they had a new chef de cuisine. The food on this visit was much improved with only one issue.
Bone marrow on toast 5 stars The only complaint that there might not have been enough (it's actually a generous portion, but it was well done and we wanted more).
Risotto 4.5 stars Very solid option. The tomatoes were a nice touch.
Prime rib 5 stars Juicy, thick, everything you might be looking for in a prime rib. The only knock might be the price, but if you have the money its a great splurge.
Brussel sprouts 5 stars No complaints. Good side to order.
Committee gratin 3 stars Undercooked potatoes. The sauce was good. The server didn't do a quality check with us so we never had a chance to explain. So it wasn't fixed.
We did two desserts and did a few drinks. I highly recommend coming here for this if budget is an issue as the desserts were picture worthy and delicious while the drinks were good and reasonably priced for the setting.
We did the baked Alaska and the smoked gianduja something. Both would get 5 stars, both had great flavor, but my preference is for less sweet desserts so I did prefer the baked Alaska. One is presented with fire, the other has a smoke presentation.
The only item that was from the previous review as they did remove many of the others and revamped their menu: Tea infused duck 4 stars It's heavy on the smoke. When you smoke something a lot, it ends up becoming similar to smoked ham. This was no exception. It was very flavorful. They told me it was smoked with chamomile, but that it would be very subtle. Firstly, there is a noticeable ease in communication between the kitchen and front of house. Our server, Joe, was wonderfully attentive without being overwhelming. The courses were timed perfectly, which again, I can safely attribute to a highly functional kitchen/FOH relationship. The staff here is a team—no one is afraid to pre-bus, or fill a water. Everyone is polite, gracious, and professional.
Full disclosure, we were spoiled during this visit, as our wonderful friend Dallas is a member of their culinary team—and he made it a point to make our experience memorable with a special prefix menu. While this would never be something I would ask for, my dining companion is far more daring than I, and had no problem going out of her way to make such a request. Dallas was more than willing to rise to the occasion, and personally presented our main course.
Within our prefix menu, I saw incredible nods to the classics presented without the heaviness you’d find at traditional steakhouses. There was mid-rare duck with a gorgeous demi glacé, Piedmontese filet, and ribeye—all accompanied by small ramekins of house steak sauce, red & green chimichurri, and creamy horseradish. Everything was cooked to perfection. I could swim in the Mac & cheese. The mushrooms presented on the side were perfect, as well.
We ended with a Baked Alaska, and some cappuccinos. It was the perfect ending, and the presentation was spot-on.

We recently visited The Committee Chop House for our 14th anniversary dinner, and we were very impressed with the food and service. We started with the bison tartare, which was beautifully presented and incredibly flavorful. The tartare was made with fresh bison meat and included smoked aioli, egg yolk, ricotta salata, shallot jam and country bread. It was perfectly seasoned and had a nice, juicy and cool texture.
For our main course, we shared the 40oz bone-in tomahawk ribeye with black truffle butter. The ribeye was cooked to a medium rare perfection and was incredibly tender and juicy. The black truffle butter added a delicious, earthy flavor. We also upgraded with four pieces of diver scallops, which were perfectly cooked and had a nice, seared crust. The scallops were served with a delicious butter sauce.
We also ordered a baked loaded potato, which was topped with crème fraîche, bacon, fondue, demi, and chives. The potato was incredibly rich and flavorful, and it was the perfect accompaniment to our steaks and scallops.
