Las Potrancas Mexican Restaurant in Parker, Colorado, is an absolute gem that deserves every bit of praise it receives. From the moment you step in, you're enveloped in a warm, inviting atmosphere that sets the stage for an unforgettable dining experience. My recent visit to Las Potrancas left me thoroughly impressed, and I'm delighted to share my 5-star review detailing why this restaurant stands out.
Let's start with the drinks, particularly the house peach margarita with Tajin. Wow! This drink is a masterpiece. The blend of sweet peach flavor with a hint of spice from the Tajin rim creates a symphony of flavors that dance on your taste buds. It's refreshing, perfectly balanced, and just the right amount of indulgence to kick off a fantastic meal.
Now, onto the food. Las Potrancas takes Mexican cuisine to new heights with their array of dishes. We sampled their enchiladas, burritos, tostadas, and egg breakfast burritos, and each dish was a revelation in itself.
The enchiladas were a true delight. Tender, flavorful meat wrapped in soft corn tortillas and topped with a rich, savory sauce that was a perfect blend of spices. Every bite was bursting with authentic Mexican flavors that transported me to culinary heaven.
The burritos were equally impressive. Whether you're a meat lover or prefer a vegetarian option, Las Potrancas has you covered. The filling-to-tortilla ratio was spot on, ensuring each bite was packed with deliciousness. The tostadas were crispy, topped with fresh ingredients, and provided a satisfying crunch with every bite.
One highlight of our meal was the egg breakfast burrito. It's no surprise that breakfast is often hailed as the most important meal of the day, and Las Potrancas takes it to heart. The combination of fluffy eggs, savory meats, cheese, and vegetables all wrapped in a warm tortilla was a breakfast lover's dream come true. It's hearty, filling, and sets the perfect tone for a great day ahead.
Aside from the fantastic food and drinks, the service at Las Potrancas deserves special mention. The staff is attentive, friendly, and knowledgeable about the menu. They are more than happy to offer recommendations and ensure that your dining experience is nothing short of exceptional.
The ambiance of the restaurant adds to the overall charm. Whether you're dining with friends, family, or flying solo, Las Potrancas provides a welcoming environment that makes you feel right at home.

Read moreLas Potrancas is nice inside, but definitely gives off a bar vibe. Don’t get me wrong, it’s still really nice inside. The website says they are open at 9am on Saturday, they actually open at 10.
I went for breakfast at 10:30. Not very busy and music was at just the right level (not annoying). Started off with some good, free, nice warm chips and salsa.
I ordered 2 items:
Smothered Green Chili Fries - Good portion of thin fries, came out on a hot plate, but the fries were warm and could have been cooked longer to make crispier. Because the fries were thin you could actually taste the green chile as well and not just the French fry so that was good. The green chile was good. Overall it was good
Smothered Egg and Potato breakfast burrito. Good size burrito, good ratio of egg to potato unlike some other places that give mostly potato. Potato was thin hash browns, it was good but could have been cooked or fried longer to crisp, it was like it was cooked in a lot of oil as seen in the picture.
Service was good up until the end when my waiter disappeared and I ran out of water, needed a box and wanted the check. I had to flag down another waiter after 10 minutes to check out. I turned around and my waiter was at the bar sitting, eating with his back turned to me.
It was a good meal, good portion size and at good price, $10 for the smothered fries, $7 for the smothered burrito. Service was ok.
I would have given it 4 stars if the fries and hashbrowns were cooked more, I hadn’t run out of water, and I was abandoned by the waiter at the end. I would eat here...
Read moreWent on opening night so I expected a few hiccups and growing pains. Being a Mexican restaurant I’ll make note of the entire experience so drinks, chips & salsa, and entree as well as atmosphere.
Drinks: I ordered a beer on tap and it was definitely not as cold as I like, definitely was lukewarm. Still drank it nonetheless
Chips & Salsa: in my opinion this is a huge make or break with Mexican restaurants. The chips were going stale but still edible, but the salsa was honestly some of the best salsa I’ve had. It had the perfect kick, flavor and texture that needs to make restaurant salsa good. Honestly the salsa alone is 5 stars.
Entree: I ordered a cheese enchilada & tamale. It comes with rice & refried beans. The rice was rather bland which was a bit disappointing but the beans were solid. The tamale I think had pork in it but not sure and the menu doesn’t say what’s in it. It was solid though not dry had good flavor and the sauce on top added additional flavor. The same goes with the cheese enchilada. It was solid with good flavor and went well with the tamale.
Atmosphere: since it was opening night it was mainly family & friends kicking off the opening but it was lively and all the staff were super friendly and welcoming. The manager? Went out of his way to make sure everything was good so that is always a nice touch.
Overall: solid restaurant. Food was good minus the chips, rice and beer. If those three things were fixed I’d definitely...
