Vitale's is no doubt a great spot when looking for a great lunch or dinner in the Parsipany area. Vitale's is located in the Parsipany Hills Shopping Plaza on Route 46 between Vail and Baldwin Road and parking is never an issue.
My favorites are the chicken cutlet sandwiches which are always fresh and tasty. While chicken cutlets are my gonto, they have a great menu variety and you really can't go wrong no matter what you pick. A few of my favorite lunches include:

I called in an order for a #1 sandwich and 2 grilled chicken salads, no fresh tomatoes on one and eggplant on the other. What we received were boxes of dry chicken on top of romaine and 3 hunks of cucumber. Where’s the peppers, onions, sun dried tomatoes, olives, artichoke hearts, mozzarella cheese… why did I just receive romaine with dry chicken? Who does that? I’m done. UPDATE: After having ordered grilled chicken salad for years, both on our own and through company ordered lunches the owner/manager decided to gaslight us and saying it’s a “miss communication” that you have to order the salad “with everything”. Serving dinner on the weekend, the deli is transformed into a trattoria courtesy of black linen tablecloths and black screens which hide the refrigerated deli cases from view. The "Spiedini" is a must order from the list of starters. The specials are super - we quite enjoyed chicken and veal dishes - but the fish and shellfish are where the restaurant shines.
