Although our waiter spoke and acted the roll of a higher establishment's waiter, he botched the service by not bring out the orders correctly - he became confused with who ordered what and none of the potatoes were correct (talk the talk, walk the walk my pet peeve). **Our problem wasn't the waiter or service - it was the quality of meat - all 5 steaks ordered were a lower quality meat that a supermarket wouldn't be able to give away. Some restaurants source vastly higher quality meat than you would guess, from specialist independent suppliers, and can probably identify its last meal and parental lineage if you ask nicely. Most will be somewhere in the middle; bought in bulk but of a reasonable quality. It doesn't necessarily matter if their meat comes from the same place as their bleach. Sometimes it will be much fresher than the refrigerated/frozen stuff you buy, sometimes it will be butchered in-house from a whole animal and properly matured for much longer than you would buy commercially. Many will mention their food sourcing on the menu or other marketing. But there are always some unscrupulous restaurants with kitchen staff or owners who don't care, who store meat badly and will serve anything they can conceal or disguise in a recipe. Those Kitchen Nightmare programmes are exaggerated, but it does happen. The only reliable thing you can say is that most restaurant meat is usually cooked with more skill, on better equipment at higher temperatures, seasoned properly, and rested before serving. But some people are excellent home cooks too. Remember that a restaurant price mark-up is generally about 400% on food (much higher on beverages).
