Sometimes karma drops a total surprise into your life that you were not expecting. Heirloom pizza in Plano Texas made me the best Detroit style deep dish pizza since I left Motown (aka Detroit the Motor City) 35 years ago. Justin, the owner, has truly captured the taste, quality and appearance of this wonderful pizza. He is a person who is kind and appreciative of his customers. Eating his deep dish brought back a flood of memories cruising Woodward Avenue and US 75 on the weekend. A significant difference between Detroit style deep dish and Chicago style deep dish is that the Detroit style is lighter and airier. This prevents you from feeling overwhelmed from eating very heavy food. Justin carries this out through the preparation of the doe which is time intensive. Authentic Detroit Deep Dish takes hours for the doe to sit and be repeatedly kneaded to reach the proper consistency before completing a pizza. This is why they are not ready for purchase before 6 pm. It is worth the wait. You can also contact Heirloom and reserve a pizza for the following day to ensure he will not be sold out. I believe in supporting local businesses. They are part of my community. Imagine my amazement when I discovered that Justin’s ideology is that local business owners can give back to their community for supporting him. He has already taken part in providing pizza for local charities. This is an amazing accomplishment since Justin has only owned this business for less than a year while also building his business in its infancy. His new customers are so impressed that they support him by also pre-purchasing meals for those who cannot afford it. He takes the receipts and places them on the window. Someone who needs something to eat removes a receipt and provides it to Justin for a meal. These type of actions turns a community into a village. Read moreI just met Justin, the owner of this place and he’s just one of those super likable guys. You just talk to him and you want to hang out with him or buy whatever he’s selling. But besides being awesome, these pizzas are just fantastic. My oldest son is a picky eater and says the Detroit pizza here is the best pizza he had in his life. I tried my first bite, and it was love at first bite. Even if I never met the owner, the taste alone makes this our new family favorite. Their NY author pizza also hits hard. Their pizza has a great flavor, nice crispy bottom, perfect crust, fresh highly quality ingredients, and amazing sauce. The breadsticks and garlic bread was also delicious as well. We ended it with dessert, cheesecake, these chocolate rolls and a chocolate pizza and they were all great. My picture doesn’t do it justice but it’s the best tasting pizza around we’ve had hands down and we’ve tried a ton. I figured we would go and try a slice to see if we could expand that very narrow palate of his. On arrival, a bit surprised to see no seating, more of a take out place. We ordered a large cheese and a small Author to go and chatted with Justin while he made them. He is very personable and notes how the food is always growing, evolving as he learns. Once ready, we take our pies home and my son is immediately concerned about the bits on his cheese pizza ( it's pecorino and delicious) but still takes a slice. I try the Author and wow, that flavor is something else! There are a lot of pizza places in Plano, but Heirloom just hit one of the top. As I savor the blend of cheese, pepperoni, and hot honey I remember Justin talking about how important each ingredient is and am understanding why.
