Warning: Very detailed. No tldr.
I'll say this first and foremost: it is a shop that ramen lovers should go to at least once. It has been the most legit ramen shop in the twin cities so far, according to my S.O. It also has beautiful presentations with each item brought out. Kind of wish the seating area had slightly more sound canceling, and maybe the sliding doors, but that would take away from the whole experience...at least with the sound proofing.
Now, onto the food review.
To start, he had cucumber lemonade. Had actual shreds of cucumbers in it. The cup also is a recyclable sturdy one, it being able to be taken home. It was the smartest idea for it to have a top cover on it. The straw was a paper straw.
We had gotten the popcorn chicken, the Kyushu spicy Tonkotsu Ramen, a side of the tonkotsu, and a cherry blossom jelly dessert
The popcorn chicken had a kick of flavor on it, which makes a nice appetizer.
The Kyushu spicy Tonkotsu Ramen: my S.O. ordered it without the bamboo shoots, and wanted to try the ramen without adding any more spice for this trip. The broth was fantastic, and there was some actual spice/heat on it, which was a very nice surprise for him. It made him wonder what the hot version was like.
The side of tonkotsu should be enjoyed with at least some sauce. Dipping it in the broth made more flavor pop from it and the broth.
The Cherry Blossom Jelly: The small balls around it I initially thought were ice cubes, but they are mini jellies, too. The flavor syrup(idk how to describe it) being poured on top of the jelly was really nice, and it tasted delicious even before pouring it. One of the shining parts for the jelly is the actual cherry blossoms on the bottom. Yes, they are edible.
The entire price, with tipping, was only 50$, so, though it is a tad more pricey than other ramen shops, it is well worth it. The only drawback I can see is that in the front, I noticed a kiosk showing a waiting list you put your name in. From the whole experience, it's easy to see why there's a need for it. I definitely recommend this place, and my S.O. says he will be a frequent patron and wants to get the omurice next...

Not authentic, tastes like packaged food. Sauces and ingredients taste like a slightly better version of Panda Express, but not anything to rave about.
Food has odd after taste in it as if it was flavored for mass production, the various soup base tastes like packaged ramen. Not unique. I hesitate to give it three stars at all because I have come back here for the second time thinking I was going to give them a second try, but just can’t bring myself to accept the quality and taste of the food. The restaurant works well for people that have not had authentic or don’t know the diff between real ramen. Otherwise this place is overpriced and overhyped. They need a new menu entirely. It doesn’t work for the Asian audience, more of a disguised Midwest version of back door Asian mass production.
Food is not disgusting or unhealthy, but def there is something that makes me gag like Ichidon Ramen, where the whole place seems like a fabricated version of nice looking restaurant without the authentic food. After the meals, it’s not impressive and it’s not something to really put a thumbs up on.
Need I say more, I will not be returning a third time. Hard chairs and overpriced food, forced gratuity tab on dining in no matter than size of the party or individual. Hence, I have a bad taste in my mouth already have the meal.
This place has so much potential, but will not survive those with advanced taste pallets.

Read more[Updated Response to Owner's Comment] That was not the case when we checked out. The server even changed it to "no tip" because she told us the 20% gratuity was already automatically included in the final bill. Any additional tip would have been in addition to the 20% already included.
Food was good, service was poor (had to ring the call button multiple times to call server to order and pay). How service is bad when there’s a call button is beyond me.
We’ve come multiple times the last few months because we genuinely enjoy the food but was shocked today when a sudden 20% gratuity was automatically included to our final bill.
We were a party of 2, that came at lunch on a weekday. We were only told at the end while paying that it was a “new” thing that they’re implementing for 2025.
We looked for signs on the way out for any notifications of this new “automatic gratuity” policy but did not see anything. I’m not against tipping but it left a sour taste it my mouth with how this new policy was suddenly implemented (especially when service was so poor). Tips are earned not entitled.
Unfortunately, this will be our last visit. We left feeling ripped off (the tip was practically an additional half of our entire meal). This policy should have been stated beforehand and as a courtesy to future customers, it should be something you state clearly on the sign by the entrance.
