I almost don't want to write this 5-star review because I'm tempted to keep this place a secret. But in fairness to them, I must say that everything about our first experience was OUTSTANDING! Let's start with the food. We had 4 in our party and everyone ordered something different, plus we shared 2 appetizers, because we wanted to try as much of the menu as possible. Starters were Street Corn Deviled Eggs (Qty 4), which did taste exactly like authentic street corn, and the chips and queso with a beef add-in. It was among the best queso I have ever had! Next, I got the Watermelon Salad, which had goat cheese, candied pecans and agave drizzle. I would have licked the bowl, if it wasn't impolite. SOOOO good, and this dish will bring me back again and again. My entree was the Bistro Filet Tips, which came with a creamy garlic butter and crispy fries drizzled with garlic aioli. I ate until I hurt because it was so tasty! My folks got the Steak Fajita Platter and the Double Fusion Burger and both reported that their food was excellent. My husband got the Spanish Lasagna, and he usually dislikes Latin food but he cleaned off his entire plate. The service was also excellent. Our server was named Charles. He was polite, friendly, informative and unobtrusive - everything we look for in a server. Our drinks were never empty. The hostess and other servers checked on us almost every time they passed our table, even though Charles always had everything covered. It was nice to not have to flag anyone down; that's so rare these days! The atmosphere was dark and cool, with a hip, Latin vibe. A little tough on old eyes when reading a menu, but we just used our iPhone flashlights to compensate. The "booth" was actually two velvet couches with a table in between and throw pillows for back support. Loved the decor! We also noticed that they had a very nice bar, which was buzzing with activity. We made a note to come back some night for drinks. The music was a blend of retro and Latin, and there were several big screen TVs at the bar. We were so pleased to have found a wonderful new dinner option and we will DEFINITELY be back! Fusion Cantina, the name is exactly that, a blend of various ethnic flavors in a high end Latin overtone. Wonderful decor, and atmosphere, but we came for the cuisine and craft cocktails. We have dined here three times and finally got off my laziness and write this well deserved review. Our server was Ameena, a very charming and congenial young lady. Charles and Anthony create wonderful cocktails, unique take on the classics. Exotic and very tasty. The cuisine is always excellent. Very inventive as the cocktails, familiar names with adaptations of cross cultural ingredients that work together well, some Asian and Latin blends that work together so well. If you dig into Asian and Latin recipes you can see the similar ingredients, so let's Fusion them! We started with the Birria Diaz, a crispy egg roll filled with tender, juicy Birria, would love a serving of the Birria all alone. Next up the Mexican Street Corn deviled eggs, another blended concept that was creamy and delicious. I like to create various flavors of deviled eggs, I am taking this idea for our next party. Also had a app that can be ordered as a main, the Clams over pasta with the addition of Argentinian Red Shrimp. Wow! What a creamy, soulful bowl of flavors enjoyment. If you enjoy shrimp and clams this offering is for you. We also had the Cuban Bowl with the addition of cilantro and sourcream, another bowl of delight. Sadly we left no room for desert. We had portions to be taken home. We thoroughly enjoyed Fusion Cantina and will return often. Add to the cuisine the very friendly and enjoyable staff it starts to feel like old friends. This is located in Peachland Plaza next to Quest Labs and Goodwill. Hey, hit your palate with a curve ball!

Excellent place. Beautifully decorated. Fried Avocado & Birria Diaz appetizers were outstanding! Our server was excellent and made a couple of suggestions for us (I was torn between the Spanish Lasagna and the Bistro Steak Tips...went for the Spanish Lasagna which was amazing! Even the Focaccia bread that it came with was perfect. We also had the Asian Bowl and all I can say is Holy Shiiit... They knocked it out of the park with this one! Tender steak, perfect rice and the sauce was just right. This place is honestly almost TOO good for the area. Tons of well balanced flavor. If you haven't been here you really should give it a try. I think you'll love it! (Unless you suck)

I'm kicking myself for not getting one pic of the food! Presentation can mean a lot to people, so you will just have to take my word.... this place is AMAZING! We started out w 3 apps. Ea one packed w flare. The chips were hot & fresh & the guacamole was as fresh as it gets w the perfect blended texture. I like lots of flavor w spice, so my only recommendation w be a little more cilantro or spice... but it was finished! The plantain w beef & cheese.... I dont know what crazy idea that was, but thats my kind of crazy! Well done fusion! I had the clams & pappardelle. My mouth is still reeling in the flavor. Another dish was the spanish lasagna which was a hit & the other was the Thai bowl. What a flavorful combo! & that slaw!!! Im going back for a dish of that! All three were recommendations of our waiter Shawn. He was attentive & on point w his suggestions. Even the drinks he recommended were a hit. It will be tough to go back & try something different when my meal was delicious. So glad to have a new & great place to add to our dining out. Thank you Fusion. Kelly. Shawn.
