The food is good, at bit better than I'd expect for conveyor belt sushi on 82nd. The staff are fun at night and will try to get your party started. I've always enjoyed coming here on weekend evenings.
However, there are some problems, the conveyor belt seems to be only operating at lunch, and there's barely anything on it when I last went. Most of the dishes have picture cards. It's not clear if you're supposed to take the pictures or just wait for them to be made, and they don't explain what to do. Most of the stuff that is on the conveyor belt are rolls, and it's not a balanced selection. almost everything on the belt was a roll with cream cheese or imitation crab salad on a yellow plate, no sashimi, nigiri, or non dairy items, appetizers or sides. The service was agonizingly slow during lunch, and the waiter just casually dumps the napkins, chopsticks, dishes, and water glasses by our side in a jumble and leaves us to sort it out. He had very careless mannerisms overall, and I was actually kind of shocked at how relaxed the waiter was during lunch, as when I had gone for dinner they had been very professional. When my shy friend dropped her chopsticks on the ground, the staff all saw, but no one got her another pair. I had to get up and say "excuse me, she needs more chopsticks" because my friend is too shy to speak up. Slow service would be FINE for lunch except, there's almost nothing on the conveyor belt and what is there is the items not everyone wants, like cream cheese rolls. Not everyone likes to mix cheese and fish and you need to have more options up. Meanwhile the staff are all standing around loudly talking and joking with each other, and no one asks us if we want anything for a while. The vibe was a bit uncomfortable for a late lunch when not many people were there.

The sushi track prices are about on par with similar places in town, but the quality here is much higher. I was surprised track sushi could taste this fresh! On top of that, there are some really nice rolls available as well. We have not tried any of their non-sushi items, but there is a selection including chicken, beef, and squid. You can even mix-and-match.
While everything else about this place is awesome and really makes it stand out as a top quality establishment, the full bar is what makes this my new favorite sushi spot. A lot of other Japanese restaurants in town have them, but they tend to be much more expensive. What you get here is simply a very high-quality experience for less money.
The strip mall location isn't my favorite, but once you get inside you will find the decor is very modern, and the place feels very well put together. A lot of the strip mall places just feel run-down, but that's not the case at all with Fujiyama. You can tell they put a lot of effort into this place.
Overall, I recommend Fujiyama to everyone who enjoys sushi bars. Their track can't be beat, especially for the price. The location may not be the most convenient for some people, but it is still worth making the trek at least once.

There's plenty of staff, so it's not an issue of being shorthanded or anything like that. We were left just sitting and waiting over and over again, it became ridiculous. The owner is obviously trying to do the right thing and have plenty of staff available, but all of the waitresses would either stand around and do nothing, or completely ignore the fact that we needed to be helped. Let me also make clear that I'm not talking about the kitchen staff, all of the guys behind the counter were great. After we finally were able to place an order,the chef guys would bring it over to us immediately. And like I said, the food is delicious. But,if you want something to drink, or want to place an order, or when you're ready to go and need the check, plan for a long wait. A LONG wait. I just found it absurd when there's like 5 customers in the whole place, and six waitresses that we would have to wait so long for anything and everything that we needed. Maybe there's too many waitresses and no one wanted to step up and be the only one who actually does the work??
