This newly opened location is not bad but as good as some of the news outlets would describe it as. I arrived closer to 8 pm on a Saturday evening, and the place was packed! Every table (Bar included) was filled, and there was a hustle and bustle all throughout the restaurant. The atmosphere was very chill with nice R&B/ Mello pop, and the lighting wasn't too bright. My first concern, however, started right as I went in to put my name on the waitlist. The Host didn't greet me at all. The host walked in and stood next to the Host stand with a blank expression on her face, but no words came out of her mouth. It took me a second to realize who she was since again, she didn't say anything to me, but our continued interaction left much to be desired. Once we were seated, we got our starter waters almost immediately. I was disappointed to see that they had no beef ramen options since I don't care for pork, and they also don't have any Ramune options like traditional ramen houses. As an appetizer, I ordered the beef skewers, which were hands down my favorite item all night. They were packed full of flavor and the meat had a very nice char to it. I only wish it came with more than 2 servings! I ordered the Miso Ramen with no egg, and it was okay for a pork ramen. The noodles were cooked to perfection, and the bok choy was crunchy and flavorful, but I didn't like anything else about it. There wasn't enough meat for the broth to noodle ration was excessive to me. I usually end up drinking the broth after, but this one did not satisfy me enough to justify that. All in all, it was okay. Not bad, but I wouldn't go again unless I was invited.

You could tell the broth was coconut milk-based, unlike other places that use water as a shortcut. It’s hands-down one of the best ramen dishes I’ve ever had. One thing that really stood out was the attention to detail with the toppings. They didn’t skimp at all, and I was impressed that the tofu was freshly fried—something you don’t always find, as many places reheat their tofu, making it chewy. My only suggestion would be to offer more spice levels. I ordered level two expecting some heat, but it wasn’t spicy at all. Still, I’m eager to come back and try more of their vegan options. Everything seems to be packed with flavor, which makes sense given the more focused menu. Overall, 10/10! I thoroughly enjoyed the experience, and Raji’s knowledge and kindness made it even better. Highly recommend checking this place out!

Miso Ramen Bar in Raleigh! This was a cute little place we found on our family outing. The dining room is fairly small with limited seating but still welcoming. Without a hostess, you check in on the tablet and wait to be seated. The menu is available via QR code, which is nice. They seemed a little short-staffed in front of house. However, they kept service moving, were attentive, and everything was clean and pleasant. I ordered a Miso Peachy to drink. It was light, frothy, fruity, almost similar to a fruit gummy flavor. The Japanese Lager wasn't much to write about šŸ˜…. The pork belly buns were my favorite! It had pickled carrots and cucumbers that gave it a great crunch and provided acidity. The pork was so tender, and the spicy mayo added a creaminess with a little bit of bite on the super soft bun. We also ordered the spicy garlic edemame. Oooooohhhhh, that sauce! Super easy to eat and very flavorful. As for the entrĆ©es, I really didn't need it after the pork buns šŸ˜†. Mine was a chicken coconut curry rice bowl, and the guys got the miso Ramen bowls. I've never had coconut curry before, it was good, but not what I expected. The chicken was well-seasoned, the rice had a great consistency, but the "coconut curry" tasted mostly like chicken broth. I thought it would have more coconut flavor to it. That could be normal šŸ¤·ā€ā™€ļø This dish also had pickled carrots and cucumbers along with mixed greens that helped elevate the heaviness of the chicken and rice. The miso Ramen was a hit with a beautiful umami broth, fresh mushrooms, soft yet crunchy bokchoy, toothsome noodles, bamboo shoots, and pork belly was the star here again. Also, the eggs šŸ˜‹. Yum! We received the level 2 spice, which was not super spicy, more like a mild chili oil.

Overall, a lovely meal!

Miso Ramen Bar is by far one of the best ramen restaurants I have been to in North Carolina. The staff there was amazing and helpful. Rogy was amazing. I have a unique allergy, and he called the chef to ensure that one of the items I wanted would not cause an allergic reaction. It is rare to find a restaurant that is willing to go above and beyond like that. Now as for the food, it is leaps and bounds above anything I have had. We started with their oolong tea with ginger honey jelly which was just what my fiancƩ and I needed. We then received our ramen which was, in a word, beautiful. It looked as good as it tasted and smelled. I ordered the Shoyu ramen and it was perfect. The noodles were cooked to absolute slurping perfection and the chasu pork was so tender it melts in your mouth. The added touch that made for me was the marinated eggs that were added. Those were the icing on the cake. Our appetizer came out during the meal which was the little extra addition we needed for these amazing ramen bowls. The beef skewers were perfectly marinated and flamed-grilled on a bamboo stick. We could taste the fire in each bit and paired with the full-bodied ramen broth, it was heavenly. The atmosphere was cozy and fun. The art on the walls was whimsical and bright. The coolest thing that made us want to come back was the fact that they were playing anime on one of the TVs above the bar. As an anime fan, that is something you don't see everyday so it made it feel like I was just at home enjoying a meal.
