My friend and I have both been having a lot of struggles in our personal lives and needed a day off, so we decided to take a vacation day on a random Thursday and go to the Sundial Bridge so I could see what all the hype was about. Once we were there we decided that we absolutely deserve a nice lunch and a drink so decided to go to Mosaic and it was so incredibly worth it.
We sat at the bar, and I'll be fully transparent here, it was a bad day for them. It seemed like they were short staffed, with all their FOH people looking like they were running around covering for at least one person who wasn't there, and their system kept going offline to boot. When I tell you that we had the best lunch, the most amazing drinks, and such a good time, I will go back on any day, including the days when it should have been miserable. Every single staff member was kind, but the bartender who was serving us was the best. He was apologetic when he felt he was behind, even though we never felt like we were being ignored or that anything was moving slowly. We were able to enjoy our food (we split the ceaser salad, and a french dip) when we asked him to make us a drink, based off color, liquor type and "sweet" he not only did so but made us probably the best drink I've ever tasted.
The food was top tier, but beyond that we were able to sit there and talk about death and tear up, then switch to laughing over something ridiculous and still felt welcome to be there taking up space at their bar. I wish I lived closer I would go back regularly because the staff that was was so great. I cannot for the life of me remember our bartenders name, but it was Thursday July 24 so if management sees this please give that guy a raise, or at the very least some praise. He handled two frazzled women with grace, and when other customers were being unkind he never faltered and stayed professional across the board.

Attached to the immaculate 4-star Sheraton Hotel in Redding, Mosaic Restaurant continues to fall short in it's efforts to present fine "cuisine-dining" to the Northstate.
Positioned perfectly alongside the Sundial Bridge walkway, the modern style restaurant boasts rustic wood beams, fantastic lighting and three or four seating areas to fulfill an array of needs. The front and back patios are shaded for the hot Redding nights, and draw a large crowd of Northstate patrons.
Once past the views unfortunately, things begin to go South. The service has become consistently slow and unprofessional. If you are placed with a few servers in particular, you are in for a long night and might as well make your way back to the kitchen and place an order yourself. Servers have been friendly, but unknowable to the food they are serving and the standards they should be keeping as an attachment to the Sheraton Hotel. Many times it appears as though the staff simply does not want to be there. Where is the passion? The heart? The drive to be Redding's best?
The menu lacks true flair and expression from a Chef aimed at providing a small variety of cuisines to customers. There is an apparent higher focus being given to the restaurant's pizza menu than to the actual dinner entrees. The food has often been hit-or-miss, typically over-cooked and/or over-seasoned with overpowering spices.

Read moreSo I normally don't write reviews, but feel i needed to this time. I want to preface this by saying our previous visits here have been fine. In fact we like the pizza so much that after a very busy 3 day weekend we just wanted to have one of their pizzas and go home and chill, so we ordered takeout. Ordered our usual pizza and caesar salad to go. Really didn't want to drive across town, but the wife got the best of me. So we picked up our food and drove home. Upon opening up the salad...no salad dressing. Kind of disappointing, but we had dropped by Costco earlier and i happened to grab a boxed premade ceasar to eat during the week, so grabbed a dressing packet and salad saved! Then my wife started to split up the salad and many of the pieces of salad were bad. Not wilty, but well beyond having that super dark green clump that you get right before it goes liquid. So disappointing. We didn't want to chance it, as this wasn't just one piece, it was several. So we ate the pizza (which was consistently good) and the wife insisted on driving back to return the salad. When i saw the price of the salad i could see her point, and when she took it back in she was told that several people don't like the salad and he was sorry, but she told him the salad was BAD...as in old! So he apologized and refunded the price of the salad. Thought that was a bit lame-had to drive all the way back to return a bad item (with no salad dressing). Kind of expected more from them - sorry to say we probably won't be back, as there are other places in town and i really don't feel like we should have to check our order carefully before we leave!
