Fuji Japanese food truck — Restaurant in Redmond

Was looking for something dinner, and stumbled upon this food truck online. Food trucks are always hit or miss for me but this, OMG! The Udon was amazing, I could literally taste the freshness, it looks like I barely even touched it because the noddles are so filling. Everyone in my household tasted the broth and it was amazing. My sister got the 007 the egg rolls and the gyzo and she said they tasted amazing. I will definitely be coming back to get other dishes and I can't wait to come taste...

Disappointed, I waited a few days to try this place. Not sure what the hype is about regarding the beef bowl. We ordered two beef bowls and one beef udon. I couldn’t believe how flavorless and basic the beef bowl was, considering it was $18!! The beef udon actually had flavor (eerily similar to off the shelf French onion soup), but had offensively few noodles....

Their meals are portioned well for the price, the teriyaki chicken bowl is packed full of chicken and rice (good ration of protein to rice for those looking for a good macro dish).
