Peru is not only home to Machu Picchu, it's home to many species of plant and animal life found nowhere else on the planet.
Like the animals and plant life there, Canasta's chicken is a rarity in this area replete with fried and grilled run-of-the-mill chicken and cuisine.
Three different languages are spoken in Peru but here at Canasta's they speak one language and that is the language of the grill, which they speak fluently.
It seems they've worked out the kinks and service is smooth and quick, and if you're waiting inside for your food you'll have the entertainment of all the action happening in the kitchen as well as the outstanding aromas wafting through the air.
On this visit I ordered the ultimate Parilla which is a quarter roasted chicken, carne asada and a shrimp skewer, with a side of green rice and pintos and fresh handmade tortillas.
The chicken of course was outstanding and tender and flavorful and perfectly seasoned while still being moist and warm when my takeout arrived home.
The carne asada was the same, being tender and well seasoned and a perfect accompaniment to the chicken and the shrimp scewer which were cooked perfectly.
And of course riding sidecar is a tall cup of chicha morada with its sweetness and spices that was cold and refreshing.
In addition to traditional meats eaten here they've also got beef heart and chicken gizzards which they grill beautifully and in a way you'd like to try them.

Chicken has not changed in flavor. It is excellent! I also ordered the steak with 2 sides. The steak was okay not anything to brag about. The side of house salad amount we got was not like before though. What they used to do before is fill one side of the container with salad and then they filled the other side of the container with salad and they would close the container. You got a lot of salad. Not this time. Something changed and I didn't get the same amount as on many of the previous occasions. I also wanted napkins and utensils. It was not in the bag. I asked before I left if they put it all in and they said yes. In the past when I have asked if an item was in the bag they said yes and it was. When I got home, no napkins and utensils. Second time, I called for takeout but whenever I called, someone would answer the phone, and then hang up right away. This happened 3 times, so I went to the store to physically place my order and they acted extremely inconvenienced and it was very slow again.They weren’t very busy that time either. Recently I tried to order from DoorDash and it said my order was being prepared. 45 minutes later, the order was cancelled without any reason given.
