I returned to Viva Mexico after my last amazing visit, and they have once again proven why they are the best. While the entire menu is outstanding and the value is unbeatable, I have to dedicate this review to a specific, absolutely brilliant dish: a delicious custom order I created, the Choripollo with Eggs. This dish is a testament to how flexible and talented the kitchen staff is! I requested the elements of a classic huevos con chorizo, but served over their tender, perfectly grilled chicken breast (pollo)—a kind of hybrid main course. They didn't even hesitate! The result was pure culinary genius. The dish featured a perfectly grilled, tender chicken base, generously topped with scrambled eggs mixed right into that smoky, perfectly seasoned Mexican sausage (chorizo). The combination of the chicken, the spice of the chorizo, and the fluffy eggs is rich, satisfying, and deeply flavorful. Having survived countless disappointing meals in local restaurants, I approached this Mexican restaurant with the cautious optimism of a man who has been fooled before but remains willing to be fooled again.

First of all, the staff lavished upon us the sort of attention generally reserved for visiting dignitaries, which would have been flattering had they not been bestowing the same royal treatment upon every other soul in the establishment. The dining room maintained such a state of cleanliness that I found myself apologizing to the floor for the impertinence of walking upon it. The servers moved with the efficiency of a well-oiled machine, and with considerably better manners. The food emerged from the kitchen at such velocity that we almost ducked for our safety. Our plates arrived looking fit for exhibition in a gallery and tasting superior to anything that beautiful had a right to taste, though I confess I remain mystified as to how the proprietors imagined a single mortal might conquer portions evidently calculated to sustain an entire pioneer family through a harsh winter.

The service was impeccable—attentive, fast, and genuinely friendly—and the atmosphere is lively and inviting. Crucially, the pricing is incredibly fair; the value you get for the quality and authenticity of the food is unmatched in the area. We started with the foundational test of any great Mexican restaurant: the chips and salsa. The chips were perfectly crisp and clearly made in-house, not greasy at all. The salsa selection was fantastic, especially the smoky, complex red salsa. It was so fresh, we nearly filled up on just the appetizer!
