I went in for the first time yesterday (6/2/15) after having seen mixed reviews, but excellent-looking photos on the website / advertisement sent out in the mail recently. I'm always willing to give new places a chance.
I ordered 3 subs: Medium Meatball, Medium New York Steamer, and Medium Smokehouse Beef and Cheddar Brisket.
If you've seen "Falling Down", you may know what to expect from the photos vs. the actual food you'll be getting.
Picture a roast beef sandwich from a chain that rhymes with "Barbies". Now cut the roast beef slices in half - this would be close to the extremely thin-sliced meats you'll find in these subs. The problem with this comes in from the lack of flavor it produces (almost a more air to meat ratio). The other problem is the quantity of the meats - there is nowhere around the sandwich that the meat sticks out, with the possible exception of the middle where it's been cut in half.
The prices would have between Above Average and High, had the subs been better quality. Based on what I saw and experienced, however, the prices are High.
The only sub that was close to its picture was Firehouse's signature sub - the Firehouse Meatball. The amount of sub you get for the price could be considered between average and slightly above average, but the quality appears to be there with this one. If I could have gone through my first visit again and only got the Meatball sub, this review would have been 100% positive. This sub, by itself, saved the review from being 1 star. It's a very weak 2 / 5 stars.
Should you give it a chance? Maybe. Definitely if you like meatball subs.

The staff was always great -- personable, friendly, and efficient. The food always fresh and tasty, piled with meat and veggies. The restaurant was always clean and inviting. Unfortunately, something has changed. Those friendly employees are no longer there. The food was good, but there was less of it, and our coupons were no longer honored. In fact, we were told that those discounts were no longer being given. Service was extremely slow, and we noticed that the only workers were an adult couple. We recently learned that the ownership has changed, and assumed the new workers were the couple we saw. After a couple of visits, we decided that the place wasn't the same anymore and we'd likely not be back. While we were in the area yesterday, we decided to give it another try. The (new) employee, Shon, who took our order was a gem! He was so nice, had a great personality, a big friendly smile, and made our food pretty darn fast. I'm not sure if there were any other employees in the restaurant because Shon was the only person we saw. He was a busy man...prepping food, bussing tables, and emptying trash. I ordered a large pastrami sandwich with extra fixings that actually exceeded my expectations. Their sandwich doesn't win any awards for size, but the ingredients were all high quality and perfectly balanced. There is a popular sub chain whose bread gets dried out by the toasting process. The bread at Firehouse subs is just the right amount of moist, with an ever so slight crunch on the outside, where it should be. There was ample pastrami meat and when I asked for extra of certain condiments, they didn't bat an eye. I was well satisfied by half my sandwich and ultimately took the other half home with me, along with two of their food grade buckets. The restaurant was clean and then up in a firehouse theme. The menu may seem a little bit pricey when you don't know what to expect. However, knowing that the business makes generous annual donations to our nation's First responders makes one feel better about spending a few bucks more for high quality.
