Tacos y Birria el Guero is a low-key taqueria sharing a parking lot with a nail spa in Santa Ana.
I love their "Asada Taco." Like most carne asada street-style tacos, it features thinly-sliced marinated beef mixed with chopped onions and cilantro deposited into back-to-back double corn tortillas. For as much as I believe typical carne asada to be a grossly overrated taco filling, this is the good stuff, the Hennessy XO of carne asada. It is tender and juicy, yet the ultra-thin slicing helps maximize the surface area that is browned and seasoned. There is a smooth and tasty avocado-chile salsa at the salsa bar that this taco wears perfectly.
The "Birria de Res Taco" is also quite fantastic. This taco features juicy braised beef rib meat pervaded with small luscious specks of salty fat. The birria is lightly spiced but pleasantly fragrant -- there is a touch of cinnamon that I caught a faint whiff of as my face approached the taco, but not enough for my tastebuds to notice unless I was looking for it; the guajillo broth is not heavy or dark at all compared to the birria de res I've grown accustomed to in San Diego. That being said, with hungry people at home waiting on their meal I didnt have time to check every taco that we ordered for quality. IF anything, the cook was supposed to do that. 2 of the tacos de birria was 90 percent fat-chewy simply fat without any meat attached to it.
Im not sure if it was the cook salvaging food, but you shouldnt salvage it you should throw it out and make new one. otherwise tell your customers that your out of that meat.

Read moreVery hard working people, delicious food (I got the al pastor with horchata, carne asasa tacos, and birria tacos). Great establishment, but I have to knock a star off because my experience was quite soiled by the not-so-succulent birria products, unkempt interior, and poor service.
First the birria. There was clearly great birria at a time, but as of 2025, that is no longer true. It tastes like the meat isn't cleaned, its recycled, or frozen (or a mix of all three). Additionally, I found a bit of bone in my batch, which was highly disconcerting and almost offensive.
The atmosphere could be improved, as the inside is often dirty and the signs are very unclear and often untrue or outdated (no dishes in the trash, pay in cash only when there's an option for card already, etc.). The lights at the left of the restaurant outside are also infrequently turned on for customers wanting to eat there, which is quite unpleasant. Service could be better too, as some front desk workers are lacking in manners and do not speak up. Most people are well meaning though.
