We had a pretty good experience at the new Flying Yolk location in Valencia. (We'd been to the one in Simi Valley and are always excited when a new breakfast-centric establishment opens up near us...especially one with vegetarian options.)
We were there on a weekend morning (and Father's Day to boot) so the pretty limited seating available was all full except for 2 seats at the tiny counter up against the wall. There's outside seating too and a little play house.

I had a Flying Fried on a Croissant without the bacon. This was plenty of sandwich for me and they did a really nice job with it. I love the tatertots inside the sandwich. genius! I also thought the hose-made croissant was really good.
It's nice that they offer a black bean patty and can remove meat from any of their sandwiches but the overall vibe is vegetarian offerings are not their primary concern. I wish instead of a black bean patty they had something like a vegetarian bacon or Impossible or Beyond sausage option as black bean patty's feel a little like your grandfather's vegetarian option. ;)
My kid had a breakfast burrito which he thought had too much egg in it, but he's not really a big egg fan so that's on him for ordering that.
The coffee was fantastic. Too often at breakfast places, cofee is an afterthought and is served as sort of a "browned water" situation. Here it was perfectly strong and done exactly as it should have been. I'd come back for this coffee.
Throw in a few more default vegetarian versions of their main offerings. (Instead of making us modify the bacon out of everything) and I'd feel like a first class citizen at the...

Yesterday, while in town for other business, I had the opportunity to stop by and grab a bite to eat. Searching the area for food ideas, The Flying Yolk immediately caught my eye — and I’m so glad it did!
Upon arrival at their easy-to-find location in the new hall, I walked into a welcoming environment with a modest crowd, all eagerly ordering some incredible-looking dishes. After fasting most of the day, I knew I needed a meal that could carry me through — and I wasn't disappointed. The ordering process was quick and smooth, and the staff provided excellent customer service. I even had the pleasure of meeting the owner and personally complimented him on the establishment’s smooth operations.
As a regular foodie and a health inspector by profession, I couldn’t help but notice the exceptionally clean work environment — something that deserves serious applause. It's clear that pride and attention to detail go into everything they do.
The menu selections were outstanding! From crispy tater tots to fluffy scrambled eggs, fresh fruit, buttery croissant sandwiches, and some of the best mini waffles I’ve ever had — every bite was fresh and delicious. Read moreI’ve been to The flying yolk 3 times, the first time was amazing food was so good and fresh, the next time wasn’t so good, my tots were not fresh so I was a little disappointed, I told myself that if I go back in third time, I’m just going to ask for Fresh tots. I came back for a third time, and I literally used the self order kiosk that they have and after I ordered my food, I asked the girl that was working at the front too. Please relay my message to the cooks that I would like my tots to be fresh And I heard her back there explaining to them that I asked for Fresh tots and when I got my burrito, it was the total opposite of Fresh. I don’t know if they had an attitude because I asked for something fresh or they just didn’t care what I asked for but my experience was gross. I threw my burrito in the trash because whether they realize it or not the tots make the sandwich or the burrito what it is. And to top it off, the meat wasn’t fresh either I opted out for bacon and I added turkey instead, and I was not impressed. Now I’m not sure if I want to come back there again what a waste of money and time because I was late for work...
