There is no human or paranormal reason it should take 75 minutes to get some street food. But that's how long it took! The food was fine and on par with every trompo stand I've been to in LA and here but holy smokes what an inefficient and sloppy operation. I waited 20 minutes in line to place my order then close to an hour to actually get the food. I didn't order anything crazy, just a torta and quesadilla and nobody in front of me was ordering huge quantities of stuff. It's just terrible organization with the person taking the orders and cash at the same time, it taking a while for those orders to get to the guys in the truck who have to then ask the trompo guy to do this thing and information and plates of stuff are going back and forth between the truck and trompo and it just spirals into chaos and slowness. The condiment table is also a huge mess. Food slop everywhere, empty salsa tubs and trash all over the ground. The whole thing is a nightmare.
The trompo stand on Beacon Hill by Red Apple is far, far superior. They weren't there tonight and that's why I tried this Rainier Beach one I'd heard about. The Red Apple crew is so fast, clean and cool. I've only ever waited like 10 minutes between the line and getting my food there because they actually do things in an efficient way. Go there. This food truck delivers unbeatable quality, flavor, and service every single time. The tacos are out of this world — from the perfectly seasoned meats to the soft, fresh tortillas and flavorful salsas, every bite is like a flavor explosion. Whether I’m in the mood for al pastor, carne asada, or barbacoa, they always hit the mark.
And don’t even get me started on the tortas — they’re massive, juicy, cheesy, and loaded with flavor. Truly some of the best tortas I’ve ever had from anywhere, food truck or restaurant.
The service? Top notch. The staff is fast, friendly, and always makes you feel welcome — like you’re part of the Taco La Cuadra family. Even when there’s a line (and there usually is), they move quickly and get your food out hot and fresh.
Oh, and did I mention how cheap it is? Seriously, the prices are very affordable for how much food you get. You walk away full without hurting your wallet — which is probably why I keep coming back so often!

I’ve had better tacos in other areas of Seattle. We ordered lengua, asada, and cabeza tacos and the meat was super dry and lack of flavor. Cabezas were tough to chew. Lengua had a really really bad and funky taste so we ended up throwing them away. The color of the lengua didn’t look right so we believe the lengua had gone bad. We had to dilute the awful taste in our mouth with coke. The only thing that is “comparable” to LA street tacos were the sauces that displayed generously for you to grab from.
