The first thing I noticed was the simple, laid back style. It's a refreshing, welcoming look, and it gave me hope that I was about to eat something delicious. I was shocked by what happened next. My mind and taste buds were blown; out of the water, across the room, into space, totally and completely blown. Hands down, it is definitely the best pho I've had in Washington, possibly anywhere. Let me break it down for you:
The noodles are the wide variety. They were the perfect consistency and felt fresh. Fresh feeling is actually the name of the game here. The herbs and veggies were also fresh and delicious. The meat was no different. The brisket was tender but not too soft, and had an amazing, deep and mellow flavor. Now we come to the real show stopper, the broth. It danced the perfect dance that only a fine pho broth can dance so well. It was light and not too salty, but also had the depth of flavor to pull you in with every spoonful. It was superbly balanced, and harmonized all the ingredients, taking everything to the next level.
I can't finish reviewing this without mentioning the sauce. Provided with the meal, was what I assume was their inhouse chiu chow chili sauce. I can't remember the fine details well enough to truly do justice to the flavor by describing it. I recall that other than the normal heat and chili flavor, it added in some bitterness and sour. The level of heat was perfect, hot enough to be truly hot, but it didn't overpower the pho. I had about 60% of my pho without adding any of this, and the last 40% with it. I can only remember preferring pho on it's own, or preferring it with the sauce, but I can't say I have ever been torn between whether or not to add the sauce. I'm wonderfully perplexed when I think about what I should choose next time, but I think both will always be the best answer.
I also have to mention, while the tofu spring rolls were delicious and I recommend them, I was sad I could have used that room for more pho.

Read moreAlmost left before we ordered because the server had a bit of an attitude. We stuck it out and ordered spring rolls, chicken wings, combination pho, and an egg noodle bowl.
You can pass on the spring rolls unless you enjoy dry cabbage slaw. We could choose between chicken or tofu and chose the chicken, which was quite dry on top of the dry cabbage, wrapped inside dry lettuce, and a dry rice wrap. I had to use my entire bowl of peanut sauce (luckily they gave us 2) to wash it down.
The fried chicken was good, served hot with sweet chili sauce. The only downside is that you get four wings for eight dollars. Good, but not that good.
Next was the noodle dishes. I personally got the egg noodle bowl with chicken and shrimp, which is one of my usual go to’s when I go to pho restaurants. While it looked good, I can’t say that it tasted that great. The broth was light and fresh, but the chicken was dry, and the shrimp was just shrimp - there was nothing outstanding about this dish that made it unique from just being able to throw all the ingredients together in a bowl at home.
The soups are served with bean sprouts, jalapeños, limes, and leafy greens. We asked if they could steam the bean sprouts and we overheard the staff talking about how we never requested that in the first place. The staff’s communication and attitude definitely killed the vibe here and I definitely felt like wanting to leave the entire time we were there.
