The first time we came across Mint Chip, we were coming back from camping in the Gila Wilderness. There was a food truck at a print festival. The ice cream was mind-blowing—the kind of food that you’re sure is only a handful of super fresh ingredients and a lot of craft know-how.
But you know how everything tastes better after you’ve been in the wilderness?
We wanted to test whether Mint Chip was the real deal or just our wilderness blinders, so we planned our entire summer vacation around coming to Silver City and going to Mint Chip.
We can vouch that Mint Chip is truly worth taking off of work and traveling hundreds of miles to eat. I even had the chocolate flavor that someone complained about in the google reviews and it was mind-alteringly delicious—the “graininess” was melt-in-your mouth chocolate made from Laura’s magical unicorn ice cream super knowledge.
We got to talking with the owner for a while and appreciate her obvious love for her community, which was infectious for our vacation and helped us really drop into Silver City.

Read moreThe best ice cream shop I've been to in Southern New Mexico, and certainly in the running for the best in the South West. All the ice cream is homemade and it had me come back there times while visiting Silver City. I love homemade ice cream and may have asked to sample too many flavors but the server (and owner!) was more than accommodating and kind. All of the flavors were rich and most were delicious. Even the ones I didn't like I could still tell it was good ice cream and would be someone else's favorite. I ended up getting the Apple Cider Donut my first time and would've got it again if it hadn't been the last batch of the season! The vanilla base was spiced perfectly and had chunks of donut in it. The kitchen smelled like donuts and the owner said they were made from scratch in house which it definitely tasted like. One of the best flavors I've ever had. And the house made waffle cone was well worth the extra dollar. They might look "burnt" at first glance but don't be fooled like I almost was! The waffle is more brown than the mass produced cones that we are use to but give them a try and it's obvious these house made ones are better. I will be visiting every time I visit...
Read moreThe best ice cream I’ve ever had was in St. Louis, Senegal. It was 100 degrees out and we were sitting at an outdoor cafe in the blistering sun with a jillion flies crowding us. After 45 minutes, I griped to my companion, “what, are they hand cranking the ice cream specially for us?” It turned out that yes, in fact, they were. It was amazing. That day I learned that there is nothing like fresh ice cream. I’ve waited years to find something that comes even remotely close.
Mint Chip is as good as that ice cream all those years ago but without the flies or long wait. It’s the kind of ice cream that invites you to be with it, to really taste the flavors and savor the textures, but completely unpretentious. Most vanillas give the term its reputation for being boring and bland. Mint Chip’s vanilla demands my attention. You know you’re at a special place when you’re crowing about the vanilla flavor. Also, they have gluten-free cones!!!!!
