Cookio Café — Restaurant in Spring Valley

This place is deliciously amazing. Everything is rich and full of flavor. I had the Cortadito coffee which was bold, full flavor, smooth and sweet. The guave pastry is like nothing you've ever had before. The guava filling is rich, thick yet fluffy and tastes like fresh fruit. The cookies! I had the dulce de leche, chocolate and red velvet. They are all delicious, soft and with layers of flavors. My favorite was the red velvet cookie that has fresh cream cheese icing. The cream cheese icing is everything! Worth the wait for the fresh baked goods, sandwiches and empanadas.

The Cuban (Cubano) emapanda and sandwich are the perfect balance of savory flavors! A must try.

They also have a tasty super refreshing minty lemon lime virgin Mojito slush. Great for a hot day and even better as a take home to spike ; )

Gotta try this spot and promote it! Johnny and Alejandro are the sweetest and kindest gentleman I have ever had the pleasure of meeting.

5 Stars – A Hidden Gem in Summerlin

I randomly stopped by Cookie Cafe in Summerlin and wow — what a great find! The food was excellent, the service was warm and friendly, and the vibe was super cozy. The coffee? Honestly better than Starbucks — smooth, rich, and just the right kick to start the day.

I had one of their empanadas and it was incredibly flavorful — crispy outside, savory inside, total win. And the sandwich? Divine. Fresh ingredients, perfect texture, and packed with flavor. You can tell they put love into what they serve.

Also, shout out to the staff — everyone was so friendly and welcoming. It made the experience feel personal, not just another cafe stop.

If you’re in the area (or even if you’re not), this spot is absolutely worth the visit. Already planning to come back and try...

I cannot express how amazing my experience here was. Every. Single. Thing. I tried was delicious in every way. The Cuban sandwich was to die for! Fresh bread, fresh ingredients! Alejandro was so nice and so accommodating and his personality made the experience that much more worth it. Johnny was so sweet and gave us a wonderful cultural experience with the coffee and explaining how delicious the combo of coffee and sandwich.

The pastries were so amazingly decadent and Maribel made sure to recommend ones that became my favorite. My partner and I came in here on a whim and I’m so glad we did because this will be our weekly spot.
